When it comes to bagels, I am a big fan of everything bagels, and I love them double-toasted. There are days in a week when I don't want to spend too much time in the kitchen, which is a pretty common situation in my house;) This recipe is one of my favorites because it is simple, quick, and tummy-filling 🙂
All you need is a packet of bagels, your favorite vegetables, hummus, cream cheese (optional), salt, and pepper. If you have all of these ingredients - congratulations, you survived 🙂 You can also have hung curd and garlic dip on the side.
This veggie bagel sandwich is loaded with hummus. It has cream cheese, if you like. You can fit all the veggies you want. This is a perfect, quick, and easy vegetarian meal. As I have said earlier, it's a perfect meal for Meatless Monday. It is also a perfect poolside dinner.

Fresh bagel: I am using a regular everything bagel here. If you get sourdough bagels, grab them:) It tastes heavenly.
Your favorite vegetables: Capsicum, onions, tomatoes, carrots, avocados, cucumbers (if you have). This recipe is versatile, so add as many vegetables as you like.
Sandwich spread: for the spread, I am using homemade hummus. I have also used plain cream cheese.

I like toasted bagels, so I am starting the process by toasting bagels. Meanwhile, slice or chop your vegetables. Spread cream cheese and hummus on the bagel and top it with vegetables. Add salt and pepper. Add hot sauce if you like and simply enjoy 🙂

- 3 tablespoon cream cheese
- 3 tablespoon hummus
- 1 medium tomato, sliced
- 1 medium onion, sliced
- 1 medium avocado, sliced
- 2 small carrots, shredded
- salt and pepper, to taste
- 1 small capsicum
