I Love to have idli, vadas, and sambar at a hotel. Well, I am not claiming this recipe as a perfect recreation. This tiffin sambar is prepared using toor dal/ pigeon peas split. I have added carrots, potatoes, and brinjals in this sambar but you are free to use your choice of veggies.
so, how to make tiffin sambar recipe? step by step photos:
first of all, prepare your dal. wash your toor dal in running water and transfer it into a pressure cooker. add water and pressure cook it for 3-4 whistles. mash the dal and keep it aside.
meanwhile, chop your veggies and keep aside.
heat oil in a pan and add mustard and cumin seeds.
add curry leaves.
add onion and green chili. saute them for a while.
add chopped vegetables.
also, add tamarind.
add water and mix well.
cook the veggies until soften and cooked on medium flame.
once the veggies are cooked add tomato,sambar masala, red chili powder, and some coriander powder.
don’t forget to add salt according to your taste.
add boiled and mashed dal and mix well.
add water.
bring the mixture to boil for 10 min at least.
garnish with fresh coriander.
serve hot with dosa, idli or vadas.

Ingredients
to pressure cook the dal
- ½ cup toor dal /pigeon peas split
- 1.5 cup water, to boil the dal
vegetables for sambar
- 1 medium potato, chopped
- 1 small carrot , chopped
- 2 medium brinjals, chopped

- 1 tbsp oil
- ¼ tsp mustard seeds
- ¼ tsp cumin
- 5-6 curry leaves
- ½ tsp tamarind
- 1 medium onion, finely chopped
- 1 small tomato, chopped
- ½ tbsp sambar powder
- ½ tsp red chili powder
- salt to taste
- ½ tsp coriander powder
- 1.5 cup water, to adjust the sambar consistency
- 1 cup water, to cook vegetables
