What if I tell you that I have an ultimate baked sweet potato recipe that is easy to make, vegan, with two different serving options, and a side dish recipe to impress your guest 🙂

We are loving these baked sweet potatoes <3

I assume you all know that we are an Indian family. We grew up eating dal, rice, curries, and roti (bread). We always have at least one vegetable portion(in curry form) and bread in our daily single meal. It could be either lunch or dinner.

When creating or adapting a new menu, we need to balance our vegetable and protein portions more carefully. This is important because we are vegetarians. You will see my serving suggestion below for more details but for now I am moving to the utterly delicious baked sweet potatoes 🙂 and why we love them.

First, very easy to make – all you have to do is prepare your oven, sprinkle some salt on sweet potatoes, bake it and have them warm 🙂

Second, My kiddo loved this with her yogurt which gave me the idea to prepare a yogurt mix(sharing recipe below) to spread over the potatoes and trust me, it tastes heavenly 🙂

Third, I like to have it during my snack time because it is healthy, less fat, and non-fried which keeps your tummy full until your next meal 🙂 You can even consider it as a light meal option.

Which sweet potatoes are best for this recipe?

Do you know, there are more than 12 types of sweet potatoes? I wasn’t aware of this fact until I moved to Canada:(. Beauregard, Jewel, Red garnet, O’henry, Jersey, Japanese, and many more. Beauregard is the most common variety sold in North American grocery stores hence I am using Beauregard sweet potatoes here.

Below are the ingredients needed to make baked sweet potatoes with yogurt mix.

For baked potatoes,

Sweet Potato – A good quality sweet potatoes.

Salt – to sprinkle on the potatoes

For yogurt mix to spread over baked potatoes

Yogurt – while, you can use your favorite yogurt here, I am using vegan almond yogurt for this recipe. Apart from it, greek yogurt is my favorite choice.

Green onions – I love green onions sprinkled over my baked potatoes.

Butter – vegan butter to drizzle but it is optional.

Chili flakes – to add spice but you can avoid if you want to 🙂

Baked potatoes,

Preheat the oven to 375°F and place a piece of foil on a baking sheet. Use a fork to poke holes into the sweet potatoes, set them on the baking sheet and cover with foil, and bake for 40 to 50 minutes, or until puffed up and soft inside when pierced with a fork.

Serve with desired toppings. Below is a quick visual walk-through to make yogurt mix topping.

How to use leftover baked sweet potatoes?

I like to use leftover potatoes in my pasta. What I do is, I crush baked potatoes to a smooth puree and add it into my pasta sauce. You can use this in both red or white sauce.

Serving suggestions

As, I mentioned earlier, being a vegetarian we have to carefully plan our meals. I like to have this as a side dish with my tofu chickpea veggie burger or 15 minutes vegetarian sandwich.

  • 2 medium sweet potatoes
  • salt , to your taste

For topping option 1 – yogurt mix

  • ½ teaspoon salted butter, optional, use vegan if you prefer
  • 2 tablespoon vegan yogurt
  • 1 tablespoon green onions, chopped
  • salt , to taste
  • chili flakes, to taste
  • 1 tablespoon cilantro, optional

For toppings option 2 – classic butter topping

  • 1 tablespoon salted butter, use vegan if you prefer
  • salt , to taste
  • 1 teaspoon green onions, or chives
  • black pepper, to taste, optional

Instructions

  • Preheat the oven to 375°F and place a piece of foil on a baking sheet. Use a fork to poke holes into the sweet potatoes, set them on the baking sheet and cover with foil, and bake for 40 to 50 minutes, or until puffed up and soft inside when pierced with a fork.

Yogurt topping preparation

  • In a small mixing bowl, mix yogurt, green onions, salt, chili flakes and cilantro. Mix everything together serve with baked sweet potatoes.
