Why I love this chickpea sandwich

I am a big sandwich girl. I love sandwiches <3 especially sandwiches made with multi-grain breads 🙂

My mom used to make Indian masala sandwiches a lot when I was a kid as my brother and I were a big fan of sandwiches. I am a small-town girl where bread, yeast, and baking powder were difficult to find. But my parents would still manage to get those ingredients for us whenever possible.

Coming back to the present day, eventually, my taste developed, and I started making sandwiches frequently(easy access to ingredients) and started using different sandwich stuffing combinations.

This summer chickpea sandwich is my current favorite<3. It is made with basic ingredients like chickpeas, mayonnaise, spices, vegetables, and bread.

How-to(with pictures)

Preparing chickpeas

If you are using canned chickpeas then you are good to go. If you are using raw white chickpeas, wash chickpeas and pressure cook them for about 20 to 25 minutes on medium flame. If you have an instant pot, follow this guide.

Drain chickpeas and keep it aside.

Preparing hummus sauce

Take a mixing bowl and add hummus to that. Add garlic, lemon juice and water.

Mix and prepare a liquid runny sauce.

Preparing chickpea salad

Transfer drained chickpeas into a mixing bowl. Mash chickpeas using a fork.

Add mayonnaise, mustard, onion, cilantro, salt, and chili flakes.

Mix everything and your yummy sandwich stuffing is ready.

Assembling

Toast your favorite bread until crisp.

Add chickpea stuffing, sliced onions, sliced cherry tomatoes, lettuce if you have.

Drizzle hummus sauce on top and cover with another slice of bread.

Your sandwich is ready 🙂

Ingredients

  • 1 can chickpeas
  • ½ cup hummus
  • 1 teaspoon lemon juice
  • 1 garlic minced
  • 1 small onion chopped
  • 2 tablespoon vegan mayonnaise
  • 1 teaspoon mustard
  • salt to taste
  • 1 tablespoon maple syrup
  • ½ teaspoon chili flakes
  • 1 cup cherry tomatoes sliced
  • 1 small onion sliced
  • 1 cup lettuce optional
  • ¼ cup cilantro chopped
  • ¼ cup water to make hummus sauce
  • 6 slice bread

Instructions
