This Mediterranean Sandwich with Chickpea salad with hummus sauce,mayo, and mustard makes a delicious vegetarian lunch sandwich. Skip the bread and serve with lettuce cups for Glutenfree! It’s also a great salad for a week-day lunch, picnic, or potluck!
If you are using canned chickpeas then you are good to go. If you are using raw white chickpeas, wash chickpeas and pressure cook them for about 20 to 25 minutes on medium flame. If you have an instant pot, follow this guide.
1 can chickpeas
Drain chickpeas and keep it aside.
Preparing hummus sauce,
Take a mixing bowl and add hummus to that. Add garlic, lemon juice and water.
½ cup hummus, 1 teaspoon lemon juice, 1 garlic, ¼ cup water
Mix and prepare a liquid runny sauce.
Preparing chickpea salad,
Transfer drained chickpeas into a mixing bowl. Mash chickpeas using fork.
Add mayonnaise, mustard, onion, cilantro, salt, and chili flakes.
1 small onion, 2 tablespoon vegan mayonnaise, 1 teaspoon mustard, salt to taste, ½ teaspoon chili flakes, ¼ cup cilantro
Mix everything and your yummy sandwich stuffing is ready.
Assembling,
Toast your favorite bread until crisp.
Add chickpea stuffing, sliced onions, sliced cherry tomatoes, lettuce if you have.
1 small onion, 1 cup lettuce, 1 cup cherry tomatoes
Drizzle hummus sauce on top and cover with another slice of bread.
