Tiramisu without mascarpone cheese(Diwali Edition) when you crave tiramisu and don’t have mascarpone cheese in your fridge 😉 Is this you? I know, it happened to me numerous times when I badly wanted to have tiramisu and realized I didn’t have mascarpone available.

I am calling this recipe a Diwali edition because there is a rich saffron flavor inspired by Indian taste with dry fruits which is perfect for Diwali parties. However, anytime is a great time to have desserts, right?! 😉

What is tiramisu?

Tiramisu is an Italian coffee-flavored dessert. It is made of ladyfingers dipped in coffee, layered with whipped cream and mascarpone, topped with coffee powder. Tiramisu is considered one of the modern flavor desserts invented around the 1960s.

Can we make tiramisu without eggs?

Yes, you can make tiramisu without eggs. Traditionally tiramisu is made by whisking eggs and mascarpone cheese. However, for the eggless version, whisk cream and mascarpone. Also, make sure to make or purchase ladyfinger biscuits without eggs. I have shared the eggless ladyfinger biscuits recipe here.

Can we make tiramisu without mascarpone?

I am revealing the secret now, the recipe I am sharing today is made without mascarpone cheese. Though I LOVE tiramisu with mascarpone only but somedays, If I am running out of mascarpone cheese then this one is my go-to recipe. Cream cheese is the alternative to mascarpone cheese in this recipe.

Does tiramisu have nuts?

No, original tiramisu doesn’t have any kind of nuts, but you can find many tiramisu versions that include nuts. If I use nuts in tiramisu, I prefer to crush the nuts until they are a fine powder so I can sprinkle them on top of the tiramisu instead of cacao. However, you can also add the nuts to the filling mixture.

Ingredients

Below are the ingredients needed to make eggless tiramisu.

Eggless ladyfinger biscuits – Can we even imagine tiramisu without ladyfinger?!

Whipping cream and powdered sugar– using 35% whipping cream here. Because we are not using eggs, whipping cream is an important element to make tiramisu.

Cream Cheese – using cream cheese as an alternative to mascarpone cheese. Because we are using cream cheese here, some may feel the taste would be slightly different.

Evaporated milk – for soaking ladyfinger biscuits.

Saffron – to give a distinct flavor to the recipe.

Vanilla extract – to enhance the flavor of the recipe.

How to make saffron tiramisu?

Step 1:

First thing first, soak saffron threads into evaporated milk and keep that aside.

Step 2: Prepare whipped cream

Take a mixing bowl, transfer whipped cream into that start whisking it at medium speed. Once whipped cream becomes airy, Add powdered sugar and whisk until stiff peak(shown below picture)

Add cream cheese, saffron, vanilla extract and whisk everything together until everything is mixed.

Whipped cream should be at a stiff peak and DO NOT overmix.

Step 3: Assembling tiramisu

Take a medium-sized container(round or square) in which you want to set your tiramisu.

Soak the ladyfingers in the evaporated saffron milk and arrange them across the bottom of a baking dish. Spread half of the whipped cream mixture on top in an even layer.

Repeat the process with the remaining ladyfingers and cream mixture. Cover the top with dry fruit powder.

Chill the tiramisu for 3 hours or ideally overnight.

Storage

You can refrigerate this saffron tiramisu for 2 days(48 hours) to 3 days. It is always better to store it in air-tight container.

Serving suggestion

Here is a quick suggestion for serving this tiramisu. You can use small cake jars, small cups, or shot glasses to layer your tiramisu and serve in small-size shots.

Can I freeze this tiramisu?

I won’t recommend freezing this tiramisu as this recipe as canned evaporated milk is used in this recipe. I have not tried freezing it. I will update this section 🙂

  • 1 cup whipping cream, 35%
  • ½ cup evaporated milk, canned
  • ½ cup cream cheese
  • a pinch saffron
  • 2 drops vanilla extract
  • handful mixed dryfruits, powdered
  • ½ cup powdered sugar

Instructions

  • Add ½ cup cream cheese, a pinch saffron, 2 drops vanilla extract and whisk everything together until everything is mixed.
  • Whipped cream should be at a stiff peak and DO NOT overmix.
  • Take a medium-sized container(round or square) in which you want to set your tiramisu.
  • Soak the 8-9 ladyfinger biscuits in the evaporated saffron milk and arrange them across the bottom of a baking dish. Spread half of the whipped cream mixture on top in an even layer.
