Important tips for making perfect pavbhaji masala powder
- I have dry roasted few spices like dry red chili individually and some spices together. however i strongly recommend to dry roast them individually if you are planning to prepare in bulk with larger quantity.
- Always store the spice mix in a air tight container for a longer shelf life.
- Always use dry spoon while using the spice mix.
- Increase / decrease the quantity of red chilies as per the required spice level.
- Always use fresh wholesome spices to make any indian spice powder.
so, how to make a perfect pavbhaji masala powder recipe? stepwise photos:
To prepare all the spices, heat your pan first.
Add coriander seeds, bay leaf, star anise, cumins, fennel and cloves.
Roast them together.
Roast for 3 to 5 mins on medium flame. Spices will start releasing its aroma.
Once roasted, keep it aside.
Now, take the same pan and add dry red chilies. roast them on medium flame. roast 3 to 4 min approx and keep aside.
Allow these spices to cool down completely.
Now take a mixer jar and transfer all spices into that.
Now, add dry ginger powder, dry mango powder and black salt.
Crush all them together. make a fine powder.
Store in an air-tight container and used as required.

- ½ tsp fennel seeds /saunf
