Ladoos has a long history. And I could say that Ladoos are the National sweet dish of India ;). The origin of this ladoo was more because of the medicinal properties that the ingredients used proffered than as a sweet. It is said that these ladoos were given to teenage girls to keep their raging hormones under check. In fact treatment, and not an indulgence, was what led to the discovery of some of the popular ladoos including methi, makhana and sonth.

So traditionally,motichoor ladoo is prepared with motichoor laddu jara or jharna. you can easily find these with the halwais or professional cooks. however, i have used fine vegetable strainer with small holes and later crush the boondis to a coarse powder to get the perfect result.

The whole process of making ladoos took a lot of time specially preparing the boondis. dont be scare, The preparation of motichur ladoo is very very easy but just a time-consuming. The major difference between motichur ladoos and boondi laddu is the size of the boondis(florets) used in it. There is no doubt that motichur ladoos are prepared with the smaller boondis and also, orange food color added to differentiate both the recipe:)

I  have used the food color to get the orange color in mothichoor ladoo recipe. if you do not have orange food color than you can mix yellow and red color to make it orange. adding food color is optional and you can totally skip it. besan florets would anyway have the rich yellow color and it is sufficient for these ladoos. usually, food color is added to make it more attractive and presentable. if you are making these laddus just for your family than skip it.

so, how to make moticur ladoos recipe? stepwise photos

to make besan batter:
in a large mixing bowl sieve besan and pinch of baking powder.
add orange food colour and give a rough mix. add milk and mix.
now add water slowly and prepare smooth flowing batter.
 
boondi preparation:
heat oil.
take fine vegetable grater/strainer.
pour prepared besan batter.
slowly tap and make sure the drops of besan fall into oil.
fry them until golden brown.take off and drain over the kitchen paper towel.
 
preparing sugar syrup:
in a kadai, take cup of sugar and add water. also add food color.mix well till you attain 1 string consistency.
mothichoor laddu recipe:
add cardamom powder in prepared sugar syrup and give a good mix.
now take prepared boondi  and blend 3-4 pulses in mixi to form coarse powder.
then add prepared coarsed boondi to a sugar syrup.
mix well and make sure to coat the all the boondi with sugar syrup.
add some chopped dry fruits and mix well.
cool it down.
prepare the ladoo taking a small amount of boondi.

Ingredients 

for besan batter

  • 1 cup besan/gram flour
  • ¼ cup milk
  • ¼ cup water
  • a pinch of baking powder, optional
  • 3-4 drops orange food color, [1/4 tsp if using powdered color]

for boondis

  • oil, to deep fry boondis
  • fine grater/strainer

for sugar syrup

  • 1 cup sugar
  • ¼ cup water
  • 3-4 drops orange food color, [1/4 tsp if using powdered color]
  • ½ tsp cardamom powder
  • ¼ cup dryfruits, chopped[i used cashews and pistachios here]

Instructions

to make besan batter:

Notes

  • add a generous amount of food color to get rich orange color.
  • If you feel that after adding boondis into the syrup and still your are unable to form the ball then add a little amount milk and try to prepare ladoos.
  • if your grater/strainer is very fine, then you can avoid blending the boondi to coarse powder.
  • make sure to attain 1 string consistency of sugar syrup, else you will not be able to prepare ladoo.
  • grease your hands with ghee to prevent from sticking.
