We love to do some experiments in our paratha stuffing. I am sharing a stuffed paratha recipe after such a long time on this blog. Confession – A few days back, I actually planned to make standard aloo stuffed paratha but I felt bored really. We were bored with that aloo paratha thing 😉 I realized that I didn’t try any new paratha recipe for so long. It sometimes happens with a food blogger too. We were kind of so frustrated and busy with our moving for a long time (you guys already know how lengthy and timeconsuming these visa processes are). In the past, I have read moong dal paratha recipe somewhere and I thought to try that out.

This Moong dal paratha is very easy to make. I made this recipe with green moong dal but you can make it with yellow moong dal too. If you are new to Indian cooking then check out pulses guide here.

Quick Recipe notes

For this recipe, I have prepared dough from whole wheat flour to make the outer layer. For stuffing, I used green moong dal, fresh spinach leaves and some regular spices. You can add your choice of vegetables.

Storing suggestions

I usually prefer to store dough and stuffing separately. The stuffing will remain fresh for 10 days when stored and refrigerated in air tight container. Because I have used whole wheat flour to make dough, This dough will remain fresh for 3 to 4 days. I have not tried deep-freezing this recipe yet. I will keep you updated guys.

Ingredients to make this stuffed paratha

For stuffing – green moong dal, onion, fresh spinach, ginger garlic paste, besan, salt, turmeric powder, red chili powder, oil, cumin. You can add a pinch of garam masala as well.

For dough – I usually prepare my dough using whole wheat flour. So yes, Whole wheat flour, salt, water and 1 tsp oil are the ingredient list I used to prepared my dough.

other – oil or ghee is used to roast parathas.

I served this paratha with pickle and curd.

How to make moong dal and palak stuffed paratha?

For Stuffing,

Pressure cook half cup of green moong dal with a cup of water. keep aside.

chop spinach(palak) and keep aside.

heat oil in a pan. add cumin.

add onion and saute for a while. Add ginger garlic paste, and besan. saute it for a while.(besan gives some aromatic and nutty texture)

Add chopped spinach(palak), salt, turmeric powder, red chilli powder and mix well.

Add boiled moong dal and mix well. keep aside.

For Dough,

Take a bowl and transfer whole wheat flour. Add salt and oil and mix well.

Add water slowly and prepare a soft dough.

knead well and keep aside. Allow it to set for 20 min atleast.

Paratha Preparation,

take a portion of dough and prepare a small ball.

roll the ball to a 3-inch circle. Place stuffing in the center of the circle.

pleat your dough. Prepare a medium-size paratha.

heat tava.

Gently put your paratha on hot tava.

spread ghee/ oil on both sides.

roast golden brown on both sides.

serve hot.

Ingredients  

for stuffing,

  • ½ cup + 1 tbsp moong dal green
  • cup water, to boil moong dal
  • 100 to 150 gm fresh spinach leaves (palak), chopped
  • 1 tsp oil
  • ½ tsp cumin
  • 1 cup onion, chopped
  • ½ tbsp chilli ga
  • salt to taste
  • ½ tsp turmeric powder
  • ½ tsp red chili powder
  • 2 tbsp besan (gram flour)

for dough,

  • cup whole wheat flour
  • salt to taste
  • ½ cup water, to prepare dough (approx)
  • 1 tsp oil

other

  • oil/ ghee, for roasting parathas
  • pickle , for serving
  • curd / yogurt, for serving

  1. I totally know what you mean about feeling bored and uninspired, Priya. That’s been happening here a bit lately – and the whole coronavirus thing isn’t helping. All I want to do is sit down and eat our favorite comfort foods!

    The extra time has let me practice some new skills, though, and I must admit that I’ve never tried making stuffed paratha before. I might have to add this to the list! Stay healthy (and sane), my friend!
