Malai lassi is a classic, traditional Indian summer drink recipe made from yogurt, dry fruits, and sometimes fresh fruits to give distinct flavor. There are a lot of flavors you can make for lassi like mango lassi, saffron lassi, and strawberry lassi. However, The version I am sharing today is the classic punjabi sweet lassi recipe.
What is lassi?
Lassi is the creamy, thick and frothy yogurt-based drink. It is enjoyed all around the year, but most preferred during hot summer days. The heat from the sun and spicy Indian cuisine make you sweat and that time this yogurt based drink will help your body to cool.

Malai lassi is neither heavy to consume nor too thick in texture. However traditional punajbi lassis are known for its thickness.In punjab, lassis are served in huge glasses. On top of the glasses they add 2-3 tbsp of white butter (makhan) and mind you the lassis are very thick.A spoon is also served with the punjabi lassi, so that first you have the soft and buttery white butter and then you drink the lassi. some people also like to have lassi with parathas.
How to make lassi rich, thick and creamy?
To make a nice lassi, always use less liquid vs yogurt amount. Because it is thick in consistency, it is heavy and filling. But if you prefer thin and light version then add more liquid (water or milk).
We often make lassi during hot summers. lassi is especially relished in hot summers because of its cooling properties. There is a salty version of lassi to which is very similar to buttermilk. This Punjabi malai lassi has a sweet taste which comes from sugar. I have not tried this recipe using jaggery instead of sugar so I can not comment on that at the moment.

How-to(with photos)
first chop your nuts and prepare cardamom powder(if you don’t have). I am sing ready-made cardamom powder here.
Take a bowl and transfer curd in it. I am using homemade curd.
Add sugar or as required. with a madani or blender or wired whisk just mix the curd till it becomes smooth. The curd should be smooth before you add other ingredients to it.
Then add chilled water.The consistency of this lassi is neither thin nor thick. if you want a thick lassi, then add 1 to 1.5 cups water.
Now add cardamom powder, Dry fruits and a few saffron strands. You can also add 2 tsp of rose water instead of cardamom powder. you can also skip all the flavouring ingredients if you don’t have any.
Pour lassi in tall glasses and serve. if you want, you can also top the lassi with malai (cream which collect on top of milk) or unsalted white butter/makhan.
garnish sweet lassi with a pinch or two of cardamom powder, saffron strands or chopped dry fruits.
serve sweet Punjabi lassi immediately.

Notes
- if you want then you can store the lassi in fridge for 1-2 days. no need to add ice cubes, if you plan to store lassi in fridge.
