Malai lassi recipe, how to make punjabi sweet lassi
Malai lassi is a classic, traditional Indian summer drink recipe made from yogurt, dry fruits and sometimes with fresh fruits to give distinct flavour.
3tbspfresh cream for garnishing OR you can use white unsalted butter
Instructions
first chop your nuts and prepare cardamom powder(if you don't have). I am using ready-made cardamom powder here.
Take a bowl and transfer curd in it. I am using homemade curd.
Add sugar as required.with a madani or blender or wired whisk just mix the curd till it become smooth. The curd should be smooth before you add other ingredients to it.
Then add chilled water.The consistency of this lassi is neither thin nor thick. if you want a thick lassi, then add 1 to 1.5 cups water.
Now add cardamom powder, Dry fruits and a few saffron strands. You can also add 2 tsp of rose water instead of cardamom powder. you can also skip all the flavouring ingredients if you don't have any.
Pour lassi in tall glasses and serve. you can also top the lassi with malai (cream which collect on top of milk) or unsalted white butter/makhan.
Garnish sweet lassi with a pinch or two of cardamom powder, saffron strands or chopped dry fruits.
serve sweet Punjabi lassi immediately.

if you want then you can store the lassi in fridge for 1-2 days. no need to add ice cubes, if you plan to store lassi in fridge.
