Instant Onion Pickle is my personal favorite condiment recipe which I usually prepared once a month at least. This pickle is very easy to prepare and you can serve instantly. one of the best condiment recipe for Indian meals.
As I have said in many older posts, Pickles are an integral part of the Indian cuisine. We have a LOT of varieties of pickles. Summer is the season of pickles in India. Indian pickles go best with rice and curries. Indian meals are incomplete without pickles.
This Onion pickle is prepared with purely Indian spices so, Don’t get confused with restaurant style pickled onions. Both are two different recipes.
Ingredients to make instant onion pickle,
To make this pickles, You need red chili powder, turmeric powder, salt, oil, lemon juice, split yellow mustard (rai dal) and onions ofcourse 😉
How to store Instant Onion Pickle?
Well, The shelf life of this instant onion pickle is 6 to 7 days when stored properly in refrigerator. I suggest to use an air tight container for storing this pickle. The shelf life of this recipe depends n the weather too. If you are living in warmer places like India then this recipe will stay fresh for 2 to 3 days.
What to serve with instant onion pickles?
- Curd Rice – I love this pickle with curd rice. This is my personal favourite combination.
- Parathas -This pickle goes best with any Indian parathas.
- Pulao – you can serve this pickle with any pulaos.

Equipment
- storage container
- mixing bowl (stainless steel)
- spatula
Ingredients
- 1 medium size onion, diced
- salt to taste
- ¼ cup oil
- 1 tbsp red chili powder
- ¼ tsp turmeric powder
- lemon juice to taste
- 1 tsp split yellow mustard
Instructions
- dice onions.
- mix all the spices, spice powders and salt with the diced onion.
- mix well so that the spices get evenly coated on the onion.
- Add oil and gently mix.
- serve with any rice or paratha.
Notes
- using warm oil will enhance the taste.
- lemon juice is must in this recipe. It helps to keep the onions fresh.
- If you can’t find Split yellow mustard then, Take a spoon of regular black mustard and grind them to a coarse powder. Use this powder instead.
