Instant Idli premix is a very handy recipe that you can prepare prior in order to make idlis. This is an easy and quick way to prepare soft and fluffy idli with the premixed rice and urad dal powder mix. instant idli with idli mix can be really handy for young bachelors or working couples on a busy morning. Idlis made from this powder is fluffy and goes bests with coconut chutney and sambar.
I recently came across to this recipe and I found this instant idli powder very handy in my kitchen because we used to prepare idli sambar and idli podi once a week in our home.
Originally, Idlis are made from the fermented batter which is quite similar to dosa batter. To make idli-dosa batter, soaking lentils is essential too which takes a lot of time.
This premix powder is prepared without soaking lentils and you can use this powder either instantly to make idlis or to make fermented better for idlis.
You can store this powder for 2 to 3 months approx when storing in an airtight container. I also want to make a note here that you can not prepare dosas from this powder mix as using this powder to make dosas will give a soft(not a crisp) dosas and sometimes sticks to the pan.
I have tried to include all the steps for making idli premix and making idlis from this premix as much possible. Don’t forget to share your suggestions.
lets make instant idli premix powder and idlis
making idli primix powder
Dry roast 1 cup urad dal and ½ cup thin poha.
blend to fine powder without adding any water.
furthemore, dry roast 2 cup rice flour on low flame.
combine the rice flour along with ground urad dal and poha mixture.
mix well and instant idli mix is ready, transfer to a airtight container and can be used for atleast 2 months.
making idlis from the premix
to prepare idlis from idli mix, take a cup of prepared instant idli mix.
add in ¼ cup curd and ½ cup water.
combine to for a thick paste.add another cup of water and mix to form thick batter.
allow it to rest for 15-30 minutes.
now add ¼ tsp eno fruit salt or pinch of baking soda and mix lightly.
pour the batter immediately onto greased idli plate.
steam them on medium flame for 15 minutes or till the idli are cooked completely.
finally, serve soft idli from instant idli mix along with chutney and sambar.

It’s always a good thing to make your own as you know exactly what goes in it. I really miss living in HK as we had a fabulous Indian Provision store that absolutely everything we ever needed.
