This eggless tutti frutti cake is awesome

When I was a kid, my mom used to bake a classic cake for me and she sometimes added tutti frutti into the batter. We didn’t even have a mixer so we whisk batter with our hands. Those cakes were just awesome 🙂 Coming back to the recipe,

I would like to have this cake as a teatime cake. You can have it with a scoop of ice cream or even served in a cake jar with whipped cream and fruit.
Ingredient Notes
Ingredients are pretty simple to make this cake. In my classic vanilla cake recipe, I used sweetened condensed milk and butter and many of you have asked for a substitution, hence this cake has neither butter nor condensed milk.
All-purpose flour
I used unbleached all-purpose flour here. You can use bleached flour too but do not use cake flour as cake flour differs from all-purpose flour.
Cooking oil
Any cooking oil will work here but I highly recommend it to use a neutral oil that doesn’t have a strong flavor. For example, canola oil.
Rising agents
Baking powder and baking soda are a must for any cake recipe.
Why yogurt/curd is used in cakes? Curd is an excellent replacement for the egg when used for baking. It adds a very nice softness to the baked good.
Sugar
Granulated sugar is used to give sweetness to the cake as we are not using sweetened condensed milk here. Do not use powdered sugar or icing sugar as it releases water quickly when mixed with batter. Sometimes icing sugar has a small amount of cornstarch which affect the texture of the cake.
Tutti frutti and vanila
Tutti frutti is a nice, sweet Indian candy made from raw papaya. It tastes like heaven when added to the cake. Vanilla is used to enhance the flavor of the cake.
Let’s make tutti frutti cake, egg-free
Preheat an oven,
First thing first, gather your ingredients. Preheat your oven for 15 minutes at 375˚F or 180˚C.
Preparing cake batter,
Take a mixing bowl and whisk oil and sugar together. You can use your mixer or hand mixer. Once sugar and oil are mixed, add yogurt and mix. Avoid lumps.
Add baking powder, baking soda, vanilla, flour, and tutti frutti, and prepare a cake batter.
Preparing cake pan,
I am separating this point as I think preparing a cake pan for cake is very important. You don’t need to place cake liners always. If you don’t have them handy, coat cake pan with butter or oil and dust some flour.
Make sure to dust flour properly and this is a full-proof method. Your cake won’t stick to the pan 🙂
Baking cake,
Once the batter is prepared, transfer it into a pan. Bake it for 30 to 35 minutes or until the cake is baked. Check the cake by inserting a wooden toothpick in the center of the cake, if it comes out clean, your cake is done, otherwise cook for some more time.
Enjoy with tea or coffee. Serve it warm.
Storage
Once the cake is baked, cool it down properly. This cake stays good for 2 days at room temperature. You can refrigerate this cake for 4 to 5 days.
Serving
This cake is meant to be served warm. However, there are some other ways you can serve this cake without doing any decorations and icing.
- You can serve this cake with a scoop of vanilla ice cream( My kid loves this way :))
- You can make a quick cake jar or a cake pudding by placing a slice of cake in a dessert bowl topped with whipped cream and fruits like strawberries.

- ½ cup cooking oil
- ¾ cup sugar granulated
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ cup tutti frutti
- vanilla extract
