I used homemade puff pastry dough here. I have already a detailed recipe on making puff pastry dough from scratch here. I almost forgot to share vegetable puff recipe to share. I suddenly realize that this recipe is due.

Curry Puff or Veg Puff

This recipe is also known curry puff and the reason behind this is – It is a small pie consisting of curry with chicken and potatoes in a deep-fried or baked pastry shell. The curry is quite thick to prevent it from oozing out of the snack(as per Wikipedia). I am sharing a vegetarian version of this recipe which is quite popular in India.

This recipe is quite popular in Singapore and Malaysia. Other regions like Myanmar, Thailand and Indonesia have their own version. So, Technically This recipe is a snack of Southeast origin.

Making puff pastry dough is actually a time-consuming process. I have already shared the detailed tips and tricks here. However, here’s a quick note – Puff pastry dough requires few tricky folds. It is a time taking procedure as you need to maintain the consistency of the butter. A country such as India, where it is usually humid and warm weather you need to set your refrigerator with high temperature.

Ingredients to make vegetable puff

for the puff pastry dough – all purpose flour, butter, salt and chilled water.

for the filling – Here comes an exciting part 😉 For the filling, I have used boiled potatoes, carrots and green peas as a vegetable mixture. Ginger Garlic paste, salt, red chili powder,turmeric powder, onion, sugar and garam masala are the ingredients I used for seasoning.

This recipe is made with very basic ingredients to keep the fact in mind that many people may not get vegetables easily during this pandemic.

Storage Suggestions

You can prepare the dough and the filling in advance and store them up to 4 days in a refrigerator. You can store puff pastry dough in a deep freezer too for 15 to 20 days. However I won’t recommend to store the filling.

How to make vegetable puff?

Prepare your Puff pastry dough first. Below is a video to make your own puff pastry dough.

Chop your onions and keep aside. Meanwhile, boil your potatoes,carrots and green peas. keep aside.

take a bowl and transfer the boiled vegetables. mash them properly.

add chopped onions.

add salt to taste, red chili power, turmeric powder and garam masala.

mix them well.

add sugar to taste and mix well. keep the mixture aside.

take a portion of your puff pastry dough. Sprinkle some flour and roll it evenly to a medium-thick base.

Now place the filling and seal it properly.

give the shape whatever you like. just make sure to seal the pastry properly.

take a baking pan and coat it with butter. place a parchment paper too.

gently place the pastries. Do not crowd the tray. brush a little bit butter on the top of puffs.

preheat the oven to 400 degrees F or 200 degrees C for 10-15 minutes.

Bake into the preheated oven for 20-25 minutes or till it puffs up and becomes golden brown.

Remove from the oven, cool for 5 minutes and then serve with tomato ketchup or green chutney.

  • 300 grams puff pastry sheets or dough, homemade or store brought
  • 4 small to medium potatoes
  • cup green peas
  • 1 small carrot
  • salt to taste
  • 1 small onion, chopped
  • 1 tsp ginger garlic paste
  • ½ tsp red chili powder
  • tsp turmeric powder
  • ¼ tsp Garam masala
  • sugar to taste

Notes

  • Use the cold puff pastry sheets/dough. Meaning it should not be at room temperature where butter inside the sheet starts to soften. The soften sheet will not puff up that nicely compared to cold, chilled one. While shaping, if it may start to soften, pop it into the fridge for some time, let it chill and then bake.
  • Always cool the stuffing completely. Even the warm stuffing will ruin it. The warm stuffing will soften the butter and then sheet and we don’t want that.
