Veg puff is a delicious street style savory puff pastry recipe that is made with potato filling. It is also known as curry puff. This recipe is a delicious snack recipe and is a popular street food recipe in India.
Prepare your Puff pastry dough first. Below is a video to make your own puff pastry dough.
Chop your onions and keep aside. Meanwhile, boil your potatoes,carrots and green peas. keep aside.
take a bowl and transfer the boiled vegetables. mash them properly.
add chopped onions.
add salt to taste, red chili power, turmeric powder and garam masala.
mix them well.
add sugar to taste and mix well. keep the mixture aside.
take a portion of your puff pastry dough. Sprinkle some flour and roll it evenly to a medium thick base.
Now place the filling and seal it properly.
give the shape whatever you like. just make sure to seal the pastry properly.
take a baking pan and coat it with butter. place a parchment paper too.
gently place the pastries. Do not crowd the tray. brush a little bit butter on the top of puffs.
preheat the oven to 400 degrees F or 200 degrees C for 10-15 minutes.
Bake into the preheated oven for 20-25 minutes or till it puffs up and becomes golden brown.
Remove from the oven, cool for 5 minutes and then serve with tomato ketchup or green chutney.

Notes
Use the cold puff pastry sheets/dough. Meaning it should not be at room temperature where butter inside the sheet starts to soften. The soften sheet will not puff up that nicely compared to cold, chilled one. While shaping, if it may start to soften, pop it into the fridge for some time, let it chill and then bake.
Always cool the stuffing completely. Even the warm stuffing will ruin it. The warm stuffing will soften the butter and then sheet and we don’t want that.
