Sesame seeds are one my favorite ingredient. Til (तिल) is a hindi word of sesame. This sesame chutney /til ki chutney is a recipe originated from garhwal cuisine.
Garhwali cuisine is the food of the Garhwal region of Uttarakhand, India. Their food is very simple but very nutritious. It completely suits the hard environment of the Himalayas. Garhwali cuisine uses a lot of chutneys to add flavor and nutrition to simple meals.

Til chutney can be made ahead and stored in the refrigerator for a couple of days. Generally, This til ki chutney /sesame chutney is eaten with toor dal and steamed rice. It can also be used as an accompaniment for traditional snacks. It also works brilliantly as a dip or salad dressing as well.
I tried this chutney along with the curd rice and I absolutely love this. This chutney can stay fresh up to 7 days(personal experience) when store in refrigerator.
To make this recipe, I used regular white sesame, fresh coriander, green chili and ginger. Salt and cumin are also used. This chuntey hardly takes 10 mins. before moving to the recipe, below are

so, lets make sesame chutney
first, take a pan and add cumins. Also, add sesame and roast for 4-5 mins. dry roasting gives the nice aroma and nuttyness to the sesame. It also removes the excess moisture from the seeds which eventually helps to extend the shelf life of chutney.
cool it down for a while and transfer in a mixer jar.
add ginger, corinader, green chili, salt and sugar.
add water and cover with the lid.
crush to a smooth paste. add little bit of water if require.
chutney is ready.
store in an air tight container and keep in refrigerator.
serve with your meals.

Ingredients

- ½ cup coriander leaves
- 1 tsp cumin
- 1 inch ginger
- 1 to 2 green chili, adjust to your taste
- salt to taste
- 1 tbsp sugar
- ¼ to ½ cup water, adjust the amount according to the consistency you want
Instructions

- add water and cover with the lid.

Yum! This sounds super delicious and refreshing. At first , we did not see the ingredient cilantro and I thought your chutney was green only because of the chilis… lol . We are chili heads. We would want to slather this delicious chutney on so many things.
