Sindhi kadhi is a popular curry recipe which is came from sindhi cuisine(as the name suggests) This curry is delicious, a bit of spicy and flavor full recipe which is served along with the basmati rice. Though sindhi cuisine is known for their rich, and tempting masala infused recipes, This sindhi curry has no onion and garlic.
Sindhi cuisine is a native cuisine of sindhi people basically from Sindh, Pakistan. Sindhi cuisine or Sindhi recipes are popular for its balanced diet with more focus on protein on each diet. this holds good for each meal consumed for breakfast, lunch and dinner. This Cuisine is very much influenced by other cuisines like Mughal, Arab, and turkhans. Sindhi cuisine has their signature recipes.
As you are familiar with the co-owner of priyascurrynation- “mr.husband;)” has many sindhi friends and one of them suggested me to try this sindhi kadhi and dal pakwan too 🙂
so, The preparation of sindhi kadhi is pretty easy and trust me it is super delicious even without onions and garlic 🙂
This recipe has a lot of veggies including ladyfinger(bhindi),cluster beans(gavar), potatoes and brinjals. When you cook bhindi(ladyfinger) in water-based curry, It gains sticky texture and sometimes it tastes bitter too. What I am doing to avoid this situation is, I am frying them at the very beginning and later combine them with the curry.
Sindhi kadhi is prepared using roasted gram flour(besan). There are no lentils added in the recipe.
It is gluten-free, vegan, dairy-free, egg-less and yet full of nutrition. You can cook it easily and add any veggies to it. It is strikingly similar to sambhar of southern India.

so, how to make sindhi kadhi recipe? step by step photos:
heat oil in a pan and deep fry okras to the golden brown. keep aside.
now add besan in the same pan and roast it until golden brown.
add cumin, curry leaves and ginger.
mix well. also, add a pinch of asafoetida.
now add half amount of warm water and mix well.
add fried bhindis, drumsticks, potaotes, cluster beans and brinjals.
add salt to your taste.
add red chili powder, turmeric powder and tamarind water *check notes.
mix well.
add the remaining amount of water and mix well.
cook the mixture until the vegetables are cooked perfectly.
serve hot with boiled rice.

Ingredients

- ½ cup okra/bhindi, sliced
- 1 medium potato, chopped
- 1 no drumstick, cut
- ¼ cup cluster beans(gavari), chopped
- 1 small brinjal, chopped

- 1.4 cup besan/gram flour
- salt to taste
- 1 tbsp red chili powder, i used kashmiri lal mirch which is less spicy
- ½ tbsp turmeric powder
- 1 tbsp ginger, grated
- 1-2 medium green chilies
- 5-6 curry leaves
- 2 tbsp tamarind water, *check notes
Instructions

- for the tamarind water, soak 1 tsp tamarind and 1 tsp sugar in 3 tbsp water. mix well and strain the mixture..
