Sev Tamatar ki subji is one of our everyday curry recipe made with typical Indian fried gram flour vermicelli and a medium spicy tomato base. This curry is super easy to make can be done under 10 mins if you have your besan sev ready(gram flour vermicelli).
There are basically two versions of this simple recipe. One is a popular gujarati sev tameta nu shak and the other one is rajasthani sev tamatar ki subji. Both the version have a very slight difference as the Gujrati version is mild where Rajasthani version is a bit spicy.
What is Sev?
Sev is a deep fried gram flour vermicelli widely used in India. It is made from gram flour. This is a very common item you can easily find in indian homes. Indian chaats like jhalmuri, panipuri, homemade bhel recipe are incomplete without this. You can easily find Besan Sev at any Indian Grocery Store.
My mother makes the world’s best sev tamatar ki subji. This subji is quite tricky when it comes to a serving part. If you have added sev at an early stage then it will soak all of the moisture from the curry and makes your curry dry.
This curry goes best with Indian bread like roti, paratha. Khichari can be served as a side dish along with sev tamatar curry and roti. However We like to have sev tamatar with jowar bajra roti or with gujrati bhakhri.
Ingredients to make sev tamatar
Besan Sev – Hero ingredient. You can get besan sev at any Indian Grocery Store or at any Indian Sweet Shop. You can can get it online too.
Tomatoes – The base of the curry is made from fresh tomatoes. You can use ready made tomato puree too but I would recommend to use fresh tomatoes only.
Seasoning – Very common Indian spices is used in this recipe. Red chili powder, turmeric powder, coriander powder, salt, and little of sugar is used here.
Other – onion and garlic. Sometimes These two ingredients can be avoided in this recipe but when used, It adds extra flavours that you will love especially in winters.
Tips to make perfect sev tamatar
- Always add besan sev just 2 mins before of serving. If you add besan sev at an early stage. then it will soak all moisture from the curry.
- Cook your tomatoes properly. If tomatoes are not cooked properly then this curry will not taste good.
- Always simmer this curry on medium hit.
Can we store this recipe?
Simply NO! I don’t recommend to store this recipe. Always made a fresh batch of this curry.
how to make sev tamatar curry?
Sev tamatar ki subji
Equipment
- Deep pan (with lid preferable)
Ingredients
- 1 cup besan sev
- 2 medium size tomatoes, chopped
- 2 tablespoon oil
- ¼ teaspoon cumin
- ¼ teaspoon mustard seeds
- 1 teaspoon red chili powder, adjust to your taste
- ½ teaspoon turmeric powder
- ½ teaspoon corinader powder
- ½ teaspoon jaggery
- 1 cup water
- cilantro, for garnishing
- salt to taste
- 1 small onion, chopped
- 1 clove garllic, minced or crushed
Instructions
- first, wash your tomatoes and chop it. chop your tomatoes finely. Also, Chop onions and mince your garlic. keep aside.
- Heat oil in a pan.
- add cumin and mustard seeds. When they crackle, add onions and garlic.
- saute for a while. You do not need to saute your onions until brown. little bit of shallow frying is enough here.
- Add chopped tomatoes.
- Add red chili powder, coriander powder, turmeric powder, salt and jaggery.
- mix well.
- now, cook this tomato mixture on medium heat until tomatoes are soft and mushy.
- Now, add water and mix well. simmer this curry for 7 to 8 mins on meium flame.
- once, tomatoes are cooked properly, turn off the flame. At this stage, your curry should not be too thin or too think. It has to be medium thick in consistency.
- Now, add ebsan sev in the curry and gently mix it for 1 minute.
- garnish with coriander.
- serve immedietly. *check recipe notes
Notes
- Adjust the amount of red chilli powder according to your taste.
- You can completely avoid onion and garlic in this recipe.
- After adding besan sev to the recipe, SERVE IT immediately. If you are planning to serve this curry later (after few hours) then only add besan sev at the time of serving and reheat the curry for 1 or 2 mins.
