Origin of Pav bhaji
Pav bhaji is originated in the 1850s as a fast lunchtime dish for textile mill workers in Mumbai. Pav bhaji was later served at restaurants throughout the city. Pav bhaji is now offered at outlets from simple hand carts to formal restaurants in India and abroad. PAV means bread and BHAJI means vegetable gravy.
Pav bhaji variations
Pav bhaji has many variations in ingredients and garnishes but is essentially a spiced mixture of mashed vegetables in a thick gravy served hot with a soft white bread roll, usually cooked on a tava.
Variations of pav bhaji recipe are Cheese pav bhaji, Paneer pav bhaji, Mushroom pav bhaji,Khada pav bhaji, Jain pav bhaji, Kolhapuri pav bhaji etc.
As I have told you, Mix vegetables are an essential part of any pav bhaji recipe. Mumbai style pav bhaji recipe includes potatoes, green peas, capsicum, carrots, cauliflower, and beans. While in my hometown spinach and cabbage is added sometimes:)
I used potatoes, green peas, capsicum, and cauliflower to prepare the mushy vegetable mixture. Here a special spice mix called ” Pav bhaji Masala” is used to give the flavors. To get a beautiful red color, Red food color is used however in the homemade version, I recommend using Kashmiri red chili powder.
Also, You should not compromise the amount of butter used here as Butter will make the curry super creamy. This recipe is served with fresh pav, lemon wedges, and some chopped onions. Sometimes tava pulao is also served with this pav bhaji. Overall pav bhaji is very easy to prepare.

How to make pav bhaji recipe at home?
First, wash your vegetables, and pressure cook it for 4-5 whistles. Mash your vegetables and keep them aside.
Take your favorite pan and heat oil. Add cumin. when crackle add onion and saute. also, add tomatoes. Make sure to chop them finely.
Once the tomatoes are softened add boiled and mashed vegetables.
Season it with salt,red chili powder, some turmeric powder and coriander powder.Mix it well. Cook it for 8 mins.
Cook them well.
It’s time for the second tadka :), Make some space in the pan and heat butter. Add ginger chili garlic paste and pavbhaji maslaa. mix all the mixture well.
Don’t forget to add some red food color.
Taaaddaaaaaa, your pav bhaji is ready. Add coriander and dollop of butter on the top and enjoy with pav.

Street style pav bhaji recipe
Ingredients
- 1 large potato
- 1 small capsicum
- ½ cup cauliflowder
- ¼ cup green peas
- 1 small carrot
- 3 tbsp oil
- a pinch of cumin
- 1 medium onion, finely chopped
- 1 medium tomato, finely chopped
- 2 tbsp ginger chili garlic paste
- 1 tbsp pavbhaji masala
- 1 tbsp + 1 tsp red chili powder
- a pinch of turmeric powder
- ½ tsp coriander powder
- fresh coriander leaves
- 2 cup water, to boil vegetable
- 2 drops red food color
accompaniments for pavbhaji
- 6 fresh ladi pav
- 4-5 nos lemon wedges
- 1 medium onion, finely chopped
- roasted papad
- tava pulao, [optional]
Instructions
- Wash your vegetables and cut them into medium pieces.
- Transfer in a pressure cooker and boil for 4-5 whistles.
- Mash them and keep aside.
- Heat oil in pan.
- Add cumins.
- Add onion and saute.
- Add tomatoes and cook until soften.
- Add boiled and mashed vegatbles.
- Add salt, red chili powder, turmeric powder and coriander powder.
- Mix it well. Cook the mixture for 6-8 mins.
- Heat butter.
- add ginger chili garlic paste. Also, add pavbhaji masala.
- mix it well.
- Add red food color and mix.
- Sprinkle some coriander on the top and serve with fresh ladi pav.
