I also learned some authentic north indian gravy recipes as well. As the credit goes to my lovely neighbor aunty. The recipe I am sharing today is an authentic Himachali Side recipe made from raw mango. Actually, this is the season’s last mango recipe as the monsoon is already started here.
The recipe is quite simple. You just need to boil the raw mangoes and that the only cooking procedure requires 🙂 This recipe can be served as a side dish with paratha, roti or rice. I personally like to have this recipe along with my other chutneys.

Himachali Mahni recipe
Ingredients
- 2 medium raw mangoes, [2 cups approx]
- salt to taste
- 2 cups water, to boil raw mangoes
- 1 cup sugar
- 1 medium onion, chopped
- ¼ cup mint, chopped
- 2 medium green chilies, chopped [optional]
- 1 inch ginger,grated
- 1 tsp roasted cumin powder
- a pinch of garam masala
- red chili powder, a pinch
- fresh coriander , optinal
Instructions
- Wash and boil the raw mangoes. ( you can steam them too)
- Let them cool a little and take out the pulp in a bowl.
- Mash the pulp to make it smooth.
- Finely chop the onions. Wash the fresh mint leaves and crush them a little. Save a few for garnish.
- Add cold water to the pulp stirring it gently till it makes a nice semi-liquid preparation. (DO NOT ADD too MUCH WATER)
- Add the chopped onions and spices.
- Add sugar according to your taste.
- Garnish with mint leaves and keep it in the fridge.
- Serve cool.
