jaisalmer chana recipe is an authentic yogurt-based black chickpea / kala chana gravy recipe. This recipe has an authentic Rajasthani taste. recipe prepared without onion and garlic but yet very creamy and tasty. Kasoori methi adds the immense flavor to the gravy.
jaisalmer chana is also known as dahi chana or jaisalmer ke chane.
Rajasthan cooking, in general, has its own unique flavor where the simplest and the most basic of ingredients go into the preparation of delicious dishes. The harsh climate and the non-availability of ingredients in this region are a great influence. flavor could last for several days and could be eaten without heating was preferred, more out of necessity than choice. The sparse rainfall is not conducive to growing fresh green vegetables. Due to this scarcity whatever seasonal vegetables are grown, are sundried so that they can be used for the rest of the year.
Here I am sharing my attempt on chana recipe which is prepared with curd and besan. This recipe is very simple but very delicious. Adding ghee during the preparation enhance the flavor of the dish. You can adjust the spice level according to your taste but I highly suggest to make it less spicy to enjoy the creamy-ness of the curd.
jaisalmer ke chane | dahi chana
Ingredients
Besan curd mixture :
- ½ cup curd / yogurt
- 1 tbsp besan / chickpea flour
- ¼ tsp turmeric powder
- ¼ tsp red chili powder
- ¼ tsp coriander powder
- ¼ tsp garam masala
- salt to taste
Other:
- ¼ cup kala chana /black chickpea
- 2 cups water, to soak chana
- 2 tbsp oil
- ¼ tsp cumins
- a pinch of asafoetida
- 2 nos dry red chilies
- 2 nos green chilies
- salt to taste
- ½ cup water
- 1 tsp kasoori methi
Instructions
chana preparation,
- soak kala chana/black chickeas for 5-6 hours at least.
- pressure cook it and keep it aside.
for besan batter preparation,
- add besan.
- add turmeric powder,red chili powder,coriander powder.
- add garam masala.
- add salt to your taste.
- add curd.
- mix it well and keep it aside.
method,
- heat oil in pan.
- add cumins.
- when they crackle add asafoetida.
- add dry red chilies and green chilies.
- saute it.
- add boiled kala chana.
- add salt.
- add ghee and mix it well.
- add besan mixture and mix.
- add some water.
- cook the mixture for 6-7 mins.
- mean while, prepare tadka.
- heat ghee.
- add cumins.
- add red chili powder. keep tadka aside.
- now, Add some kasoori methi in grvay.
- pour some tadka on the top.
- serve hot.
