Indian Red Curry Paste is a basic “All-in-one” curry paste recipe which is the base of almost all Indian curries. This Indian basic curry paste is made from scratch. Yeah! you can make, chana masala, Rajma masala, spicy aloo, paneer curry and many more recipes using this curry. Also, This recipe is a part of my Freezer Friendly Friday series.
When I was in India, I usually prepare a fresh batch of this paste every time whenever there is a North Indian curry on the menu. After moving to Canada, The first thing I learnt is to plan my meals ahead for efficient grocery shopping and store basic meal preparations properly so that we don’t have to run here and there at the time of cooking.
Indian Red Curry Paste
- Indian curry paste has many variations. But the base paste is made from onion, tomato, and ginger-garlic paste.
- Allow the mixture to cook until thick.
- The best way to know if the paste is done is by checking if oil is separated from the mixture.
- Always Cool down the paste properly before storing in a refrigerator.
Ingredients to make red curry paste
This Red curry is made with Tomatoes, Onion, Garlic, Ginger and Green chillies. I have added a pinch of salt. I have not added any kind of seasoning because This is an all-in-one recipe and every recipe has variations in seasoning so I have not added red chilli or turmeric powder in it.
How to store this Indian Red Curry Paste?
Storing red curry paste is a fuss-free process here.
- Cooldown the paste completely before storing it.
- You can use an airtight container or a ziplock bag to store this paste.
- I am using a ziplock bag here to utilize my freezer space. Store it in a deep freezer and use it as required.
- Store it in small batches so that You don’t need to defrost the whole amount of paste every time you use it.
- This masala paste will stay fresh up to one month in a deep freezer.
How to use this Red curry paste?
- First of all, Take out the required amount of paste and defrost it.
- You can use this curry masala paste to make chole, rajma, Aloo matar, palak paneer, Matar curry etc.

How to make Indian red curry masala paste?

Equipment
- deep pan
- mixer OR blender
- zip lock bags
Ingredients
- 6 medium size tomatoes diced
- 2 large onions diced
- ¼ cup ginger roughly diced
- 4-5 green chillies adjust to your taste( I am using medium spicy chillies here)
- ¼ cup garlic cloves
- water ( 2 cups in total) to crush the paste, optional
- 1 tbsp salt
- 2 tbsp cooking oil
Instructions
- Take your mixer jar first and crush tomatoes to a smooth paste. Add water if required.6 medium size tomatoes, water ( 2 cups in total)
- In the same mixture jar, add onions and make a fine paste. Add water if required.2 large onions, water ( 2 cups in total)
- add ginger, garlic and chillies and crush them to a fine paste too. Add water if required.¼ cup ginger, 4-5 green chillies, ¼ cup garlic cloves
- mix everything together.
- heat oil in a pan.2 tbsp cooking oil
- add this crushed paste into the pan and cook on medium flame.
- add salt and mix well.1 tbsp salt
- cook until thickens and oil oil oozes out or seperated.
- cool it down properly and store it in the ziplock bags or in an air tight container.
- deep freeze it and use as required.
Love this savory spicy sauce. We can think of many recipes to use it in. Right now this would bring loads of flavor to the basic pantry ingredients.
