Ghee roasted sweet potatoes are very easy and quick dessert kind of recipe. Sweet potatoes are roasted in ghee and flavoured with cardamom and sugar. These Potatoes are one the quickest dessert recipe.
In India, My mother used to make “sweet potato halwa” during vrat(fasting). I never liked it in my childhood. However Few months back, my dear friend made these sweet potatoes and it reminded me my mother’s halwa. I recently tried this old and modified recipe with Canadian sweet potatoes and I personally liked it. This recipe officially comes under the “Indian sweets” category.

It is believed that sweet potatoes are originated from central or south america. It is also believed that sweet potatoes might have been present in Polynesia thousands of years before humans arrived there.

Ingredients to make sweet potatoes
Ghee or clarified butter – MUST have in this recipe. I always use homemade ghee and managed to make my very own ghee in Canada too.
Sweet potatoes – Recommended using good quality of sweet potatoes.
Sugar or honey – I have used sugar here in this recipe but you can use honey too.
cardamom – cardamom gives a distinct flavor to the recipe. Do not skip this ingredient.
Can we store this recipe?
YES! you can store this recipe. Store it in an air tight container and refrigerate it. I do not recommend to freeze this recipe.

Ghee roasted sweet potatoes
Equipment
- Deep pan (with lid preferable)
Ingredients
- 1 to 2 medium sweet potatoes, 1½ cup approx
- 1 tbsp ghee / clarified butter
- 1 tbsp sugar, adjust to your taste
- ¼ tsp cardamom powder
- 2 tbsp mix dry fruit powder, optional
Instructions
- Wash and peel sweet potatoes. peel off the skin and chop into medium pieces.
- heat pan.
- Heat ghee. once Ghee is hot enough, add sweet potatoes.
- saute it for a while.
- cover the pan with the lid and cook for 5 to 6 min on medium flame.
- check if potatoes are cooked enough.
- now, add sugar and cardamom powder.
- mix well and cook for another 2 mins.
- once the potatoes are cooked and sugar is melted, serve hot.
- sprinkle some chopped or powdered dry fruits on the top.
Notes
- You can use honey instead of sugar.
- You can use either chopped or powdered dry fruits like almonds, cashews etc. You can completely avoid it too.
- Remember, This is a SWEET recipe so serve it along with your meal or after meal 🙂
We make Robbie sweet potatoes quite often! It was one of the few things he ate and loved as a baby…so we just kept with it. I normally shake the top of his with a bit of cinnamon-sugar mixture, but I love the bit of cardamom in here. I’m a huge fan of cardamom!
