Healthy, fiber-rich, easy on stomach, oven-baked fries made with butternut squash. These fries are a healthy alternative to french fries.

Fries are mine and my toddler’s favorite finger food and we love all kinds of fries 🙂 Winter is here and so is squash season. butternut squash for fries and pumpkin are my two most favorite squash.

Though this recipe is very similar to my potato fries recipe but squash is a healthy choice 🙂

Ingredients

Below are the ingredients required to make squash fries.

Butternut squash: one whole butternut squash deseeded and peeled.

Seasoning: Salt and pepper. You can use red pepper powder, mix herbs, and garlic as well. I am avoiding it.

Corn flour: to make fries crispier.

Oil: drizzle on fries.

Instructions

Preheat the Oven:

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

Prepare the Squash:

Peel the butternut squash and cut it into evenly sized matchsticks. The uniform size ensures even cooking.

Seasoning Mix:

Sprinkle some corn flour on fries. In a large bowl, combine oil, salt, and pepper. Toss in the butternut squash matchsticks, ensuring they are well-coated with the flavorful seasoning mix.

Arrange on Baking Sheet:

Spread the seasoned butternut squash evenly on the prepared baking sheet, making sure they are not crowded. This helps achieve that perfect crispiness.

Bake to Perfection:

Bake in the preheated oven for 20-25 minutes, flipping the fries halfway through to ensure an even golden brown color.

Garnish and Serve:

Once the butternut squash fries are crispy and golden, remove them from the oven. Garnish with fresh parsley or cilantro for a burst of color and added freshness. Serve immediately.
