It has some essential minerals like iron,copper, potassium, zinc. I personally love the root vegetables like carrots, potatoes, arbi, suran etc. However, if you are regular potato eater then you might find the texture of arbi is a bit sticky. But I really don’t mind because I always want the variations. Now, When it comes to a taste, Arbi’s taste is very similar to a regular potato.
Even, The boiling method of arbi is also 90% similar to potatoes. Just that, arbi requires less time to cook as compared to the potatoes.
Today’s recipe is also known as “sukhi arbi” because no water is added in the curry. I usually make this in my busy weekday’s meal. I have already shared one meal menu here.
The preparation of this recipe is very similar to aloo methi roast recipe. The only time taken in this recipe is the rinsing the taro root, boiling and peeling them. I always prefer to use my pressure cooker for boiling any roots. If you guys don’t have one, then you have to boil this roots in boiling water which is undoubtedly a time taking procedure.
Onion and garlic are used in this recipe. now, when it comes to a specific cutting choice I like to chop them finely but you can try with sliced onions as well. Rest of the things are pretty simple as you can easily get Indian spices.

so, how to make arbi roast recipe? step by step photos:
first, rinse the arbi roots in running water to remove the dirt.
now, heat pressure cooker and add water in it. Also, add washed arbi and pressure cook it for 3 whistles on high flame.
heat oil in pan. add cumin.
peel the skin and cut them in medium circles. keep it aside.
when the cumin crackles, add garlic and chopped green chili.
saute for a while.
now, add chopped onions and saute it.
add turmeric and cook the onions for 2 min.
add red chili powder and coriander powder.
also add salt to taste.
add chopped arbi and mix.
cook arbi for 2 mins and serve hot.

- 1 tbsp oil

- 1 medium green chili, chopped [optional]

- ½ tsp turmeric powder
- ¼ tsp red chili powder
- a pinch of coriander powder, optional
- salt to taste
Instructions

- Sometimes, pressure cooking arbi is depends on the water you used. after 3 whisltes, check the arbi by inserting fork in the center if it not soft then cook it again for 1-2 whisltes.
