lima beans curry is a very simple and comfy recipe. It can be prepared with no garlic no onion. This butter beans curry is super simple to make and goes perfect with sticky plain rice and roti.

It is known as “vaal nu shak” in gujarati. these beans are also known as butter beans. You need to soak the beans well in advance in order to prepare this recipe. Rest of the preparation is quite simple.

I always try to add some beans and pulses in my meal as they are a great source of protien. We are vegetarians so eggs and meat are not the option for us. I must note that if you are new to Indian cooking then please check our basic pulses guide here.

Comin to the recipe, We used to prepare this recipe with poori and jeera aloo. The consistency of curry can be adjustable. I prepared this recipe curry in a bit of light liquid form because I wanted to serve this curry with rice. you can see my full platter here.

so, how to make wide white bean curry recipe? step by step photos:

First and foremost, Wash the beans and soak them for 6-7 hours or over night.

once the beans are soaked, drain and transfer them in a pressure cooker. Add water and boil them for 3-4 whistles on medium flame.

heat oil in pan.

add mustard seeds and cumin. add curry leaves.

add boiled beans and mix.

at this stage, add garlic if you want.

add water,red chili powder, turmeric powder and salt.

cook the curry on high flame for 10 mins.

serve hot with roti and rice.

  • 1 cup lima beans/butter beans
  • 2 cup water, to soak beans
  • 2.5 cup water, to pressure cook beans

  • First and foremost, Wash the beans and soak them for 6-7 hours or over night.
  • once the beans are soaked, drain and transfer them in a pressure cooker.
  • Add water and boil them for 3-4 whistles on medium flame.
  • heat oil in pan.

  • add boiled beans and mix.
  • at this stage, add garlic if you want.
  • add water,red chili powder, turmeric powder and salt.
  • cook the curry on high flame for 10 mins.
  • serve hot with roti and rice.

Notes

  • You can totally avoid garlic.
  • you can soak the beans one week advance. Just soak the beans, drain it and freeze it. remember, DO NOT refrigerate the soked beans, always put the soaked beans in deep freeze.
