ven pongal recipe| how to make khara pongal recipe with step by step photos: Pongal is a popular South Indian region rice dish recipe which is originated from shrilanka, tamilnadu, Telangana and Andhra Pradesh. There are basically two versions of pongal recipe. One is sweet Pongal and another one is savory. The version I am sharing today is a savory pongal recipe which is made from rice and yellow split(moong).it is typically served for morning breakfast with side dished like sambar and coconut based chutneys. However, I served this pongal with tomato rasam and I absolutely love this 🙂
Ven Pongal is a delicious south indian breakfast recipe. It is basically a porridge-like rich dish topped with cumin, asafoetida and black pepper with the exotic flavor of ghee.
Ven pongal is also known as Khara pongal where “khara” means “savory”. In pongal recipe, Black pepper is the key ingredient and generally used as a whole form. However, If you don’t like biting whole peppercorns then you can use black pepper powder.
it is easy, simple and quick to prepare, and most importantly a healthy alternative too. the best part of this dish is its ability to be prepared with and without vegetables. the traditional recipe is just with rice and moong dal with spices like pepper, ginger and dry fruits. but as an extension, you can make it with veggies like finely chopped carrots, beans, peas, corn and even shallots. but this is just a variation and I request you to keep it simple if you are here for just plain spicy pongal recipe.
before I move to the recipe here are some tips and suggestions.
- I would heavily recommend using an equal proportion of rice and moong dal while preparing this dish. some prefer to have 2:1 ratio of rice to moong dal but for authentic taste, follow 1:1 ratio.
- any rice should be good to be used in this recipe. but I found sona masuri rice is the most preferred rice for this recipe.
- do not forget to roast rice and dal before using it in the recipe. basically, it will help to release a nice aroma for the dish. having said that, do not brown the rice and dal and roast it slightly.

so, how to make ven pongal recipe?step-wise photos:
add moong dal and raw rice in a pressure cooker.saute for a minute or until it turns aromatic.
add water and salt. mix well.
cover and pressure cook for 3 whistles on medium flame.
once the pressure settles down, open the cooker and give a good mix.
in a pan heat ghee.
also add cumin, asafoetida,curry leaves, black pepper, ginger and cashews.
saute on low flame until cashew turns golden brown.
pour the tempering over cooked rice and dal mixture.
give a good mix, add more ghee if required.
serve ven pongal/khara pongal with coconut chutney and sambar or tomato rasam .

Ingredients
- ½ cup moong dal/yellow gram split
- ½ cup raw rice
- salt to taste
- 2.5 cups water
- 1 tbsp ghee/clarified butter
- ½ tsp cumin
- 7-8 black pepper corn
- 10 cashews
- 1 inch ginger, chopped
- a pinch of asafoetida
- 5-6 curry leaves
Instructions
- add moong dal and raw rice in a pressure cooker.saute for a minute or until it turns aromatic.
- add water and salt. mix well.
- cover and pressure cook for 3 whistles on medium flame.
- once the pressure settles down, open the cooker and give a good mix.
- in a pan heat ghee.
- also add cumin, asafoetida,curry leaves, black pepper, ginger and cashews.
