vegetable yakhni pulao recipe | how to make veg yakhni pulao with detailed photos and video recipe: – yakhni pulao is very rich yet simple pulao recipe belongs to the Pakistani cuisine. It is the recipe i loved the most after my veg dum biryani. This dish have a rich flavor of raw spices. Roasted dryfruits and onions enhance the taste of the dish.
Yakhni is basically a stock either vegetable stock or a meat stock often a base for the recipe like pulao or soups. While in turkish cuisine, same recipe is prepared as stew.
Both the forms have one similarity which is a use of brown onions. The thing i like most about brown onions is the mild smoky flavor. I consider this one ingredient as a Super hero ingredient which has a ability to give instant rich flavor to the recipe. I sometimes use brown onions in my simple basmati rice as well.
Well, Yakhni pulao is the dish i tried after involving in blogging. The dish always taste great with meat. I am sharing my vegetarian version here.

Coming to the recipe, I used carrots, potatoes, beans ,green peas and cauliflower in this recipe. If you like capsicum, then you are free to add. I used regular basmati rice here. I always prefer at-least 30 min soaking before using rice in any pulao or biryani.
for the tadka,you can use any choice of dry-fruits here . I am using whole dry-fruits.I sometimes enjoy the whole crunch of the dry-fruit along with pulao. You can use finely chopped as well.

Ingredients
for bouquet garni :
- 4 nos green cardamom
- ½ tsp saunf /fennel seeds
- ½ tsp coriander seeds
- 1 inch cinnamon
- 2 no bay leaf
vegetables and stock:
- 1.5-2 cups water
- salt to taste
- 1.5 cup mix vegetables , chopped, 1 small potato,1 small carrot , 2 tbsp green peas and some cauliflower
for tadka/garnishing:
- 1 tbsp ghee / clarified butter
- ¼ cup onions, sliced
- ¼ tsp cumins
- ¼ cup mix dryfruits
- 1 tbsp raisins
other:
- ½ cup basmati rice, soaked
- salt to taste
- 2 tbsp oil
- ½ tsp cumins
- 1 tbsp ginger chili garlic paste
- ¼ cup onions, chopped
- 4 green cardamom
- 1 inch cinnamon
- 1 bay leaf
- 1 cup earlier prepared veg stock
- ½ cup water
- 1 tbsp yogurt
Instructions
for vegetable and stock preparation:-
- heat kadai.
- add water and bring it to boil.
- add chopped vegetables and salt.
- add remaining water.
- add spice bouquet garni.
- cover with lid.
- bring veggies to boil for 8 mins.
- separate veggies and vegetable stock. keep both aside.
for tadka / garnishing:
- heat ghee.
- add some cumin.
- when they crackle add sliced onions.
- cook onions until brwon.
- add dry-fruits and roast it well.
- keep it aside.
for rice preparation:
- heat oil in pan.
- add cumins.
- add cardamom,cinnamon and bay leaf.
- add ginger chili garlic paste.
- add onions and saute it.
- add soaked rice.
- add salt to taste.
- add vegetable stock and water.
- mix it well.cover with lid.
- cook for 5 mins first.
- after 5 mins, add yogurt and mix it well.
- cook rice until soften.
- serve hot.
