so, how to make this veg biryani in a pressure cooker?

first finely chop your vegetables and slice your onions. meanwhile, soak your rice. heat oil. fry your onion until golden brown and keep aside.

after that heat oil. add cumins, bay leaf and black cardamom.Also, add ginger chili garlic paste and onions.

Saute it for a while.

add chopped vegetables and mix.

now, prepare a curd mixture. mix red chili powder, turmeric powder and coriander powder in yogurt and mix well.

add this curd mixture into the vegebles.Also, add some salt.

now, add soaked rice and water.

pressure cook it for 3 whistles.

sprinkle fried onions, tomatoes and fresh coriander leaves.

enjoy hot.

Ingredients  

  • 1 cup basmati rice, soaked
  • 1 medium onion, sliced
  • 1 small onion, sliced to fry
  • 2 tbsp oil
  • Âź tsp cumin
  • 1 tbsp ginger chili garlic paste
  • ½ cup curd
  • 1 tsp red chili powder, * to your taste
  • ½ tsp turmeric powder
  • ½ tsp coriander powder
  • salt to taste
  • 1 medium tomatoes, sliced [optional]
  • fresh coriander, for garnishing
  • 1 bay leaf
  • 2 black cardamom
  • 1 cup water, to boil rice
  • 1 cup mix vegtables,chopped, (i used potato,green peas,beans and cauliflower)

Instructions

  • heat oil in cooker.
  • add 1 small sliced onion and fry until golden brown. keep aside.
  • add cumin in the same cooker.
  • add bay leaf and cardamom.
  • add ginger chili garlic paste and sliced onions. saute it for a while.
  • add chopped vegetables.
  • add salt to your taste.
  • mix curd,red chili powder,turmeric powder and coriander powder in a bowl and mix it well.
  • add this mixture to the vegetables and mix it well.
  • add soaked rice and water(DO NOT MIX)
  • pressure cook it for 4 whistles.
  • sprinkle fried onions,sliced tomatoes and fresh coriander.
  • serve hot.

Notes

  • you can skip adding raw tomatoes on the top. I personally like to have raw tomatoes on the top of biryani.
  • you can even add tomatoes along with mix vegetbales.
  • you can even add saffron milk on the top. for that, soak 5-6 saffron thread in 2 tbsp milk for 10 mins. add this before pressure cooking the rice.
  • you can even use biryani masala. use 1 tsp for this measurement.
