Hello everybody, I am back with another delicious pickle recipe šŸ˜‰ This pickle is our family favourite recipe. You will find this recipe in our home throughout the summer. This recipe is also known as “ąŖ•ą«‡ąŖ°ą«€ ąŖ”ą«ąŖ‚ąŖ—ąŖ”ą«€” in Gujarati. Well, some people called this recipe as ” keri dungali kachumber” in gujarat.

This pickle is basically a sweet and spicy pickle recipe but it is not a traditional pickle at all. It is made with raw mango, onion, jaggery. No mustard seed is used in this recipe.

Ingredients

Hero Ingredients – raw mangoes and onion. These two are the hero ingredients of the recipe.

Jaggery – Jaggery is used to give the sweetness to the recipe. In rare cases, You can use sugar too but I suggest to use jaggery only for this recipe.

Spices – Red chili powder is used to give spiciness. Oil, Salt and Coriander powder is used to enhance the taste and texture of the recipe.

Can we store this pickle?

This is not a traditional pickle recipe but you can store this pickle upto 3 days in a refrigerator. Store it in an air tight container. Discard the pickle after 3 days as It has onions and I won’t recommend to use it after 3 days.

Variations

You can completely avoid onions in this recipe. We love onions so we always add it. There are no other variations for this recipe that comes in my mind right now. Comment below if you find any similar recipe. I would love to know.

How to make sweet mango instant pickle?

first and foremost, chop onion and mangoes finely. Fine chopping is recommended here.

Now, Take a mixing bowl and add all the ingredients together. mix well.

Set this pickle aside for two hours on room temperature.

Because salt and oil is added, jaggery will melt automatically. For the jaggery variety, use “desi or kolhapuri jaggery”. You can easily get jaggery at any indian grocery store.

Stir the pickle after one hour. You will notice the jaggery will completely melt after sometime. If you are living in a place where weather is humid, then this pickle will take less time to be done.

Instant mango and onion pickle

Mango and onion instant pickleĀ is one of the easiest pickle recipe you can make as a beginner. It is a delicious sweet and spicy pickleĀ made in just an hour.

Serving Size 1 cup

Ingredients  

  • Ā½ cup raw mangoes , chopped
  • 1 medium onion , chopped
  • 2 tablespoon oil
  • 2 tablespoon jaggery
  • salt to taste
  • 1 teaspoon red chilli powder
  • 1 teaspoon coriander powder

Instructions

  • take a mixing bowl and transfer all ingredients in a bowl.
  • mix everything together.
  • keep aside and use it after 2 hours.

Notes

  • you can use sugar instead of jaggery.
  • adjust the amount of red chili powder according to your taste.
