I have read so many recipes of sooji halwa where some of them using sugar syrup instead of whole sugar. I am sharing the way my mumma used to prepare for me and bro.
I used both milk and water here to cook the sooji. Milk will help to maintain the light color of the halwa. Also, I am adding sugar directly without preparing the syrup. Coconut in this halwa tastes great either using fresh or the dried one. Authentic recipe needs a lot of ghee and I also believe that you are not giving justice to the Indian halwa recipe if you are reducing the amount of ghee 😉

Ingredients
- 1 cup semolina / sooji
- ¼ cup ghee / clarified butter
- ½ cup milk
- ⅓ cup water
- ¼ cup dry-fruits, finely chopped
- ½ tsp cardamom powder
- 1 tbsp coconut powder
- ¼ cup sugar, [approx] adjust to your taste
Instructions
- heat ghee.
- when ghee melts properly, add semolina/sooji.
- roast sooji until golden-brown on medium flame.
- when the sooji is roasted properly, add milk.
- milk starts boiling immediately.
- add water and mix.
- add coconut powder.
- add sugar and cook.
- cook the mixture until it leaves the side.
- add cardamom powder.
- add some dry-fruits and mix.
- serve hot.
