Kesari means saffron here. Kesari is also a hindi word of orange color. This delicate orange color comes here from the fresh saffron threads. This is actually a key part of the recipe. For this recipe, you have to soak saffron threads for 1 hour at least in warm water or milk.Also, you can’t compromise the amount of saffron threads here because the number of saffron threads is the responsible for the shade of the color. you can even use a drop of food color as well because I understand that everyone can not afford the pure saffron especially when you are preparing it in larger quantity.

apart from this saffron preparation, you will require sooji OR fine semolina, sugar, some dry fruits and water. Since the recipe tastes very much similar to sooji ka halwa, The method of preparing the recipe is totally different.

Traditionally, rava kesari is served as a sweet recipe. however, kesari bath recipe is very special in karnataka cuisine. in karnataka rava kesari is served for breakfast with upma or khara bhath as a sweet and savoury combination. and this combination is popularly known as chow chow bath recipe. especially in bangalore, it has become the staple food with the working class who loves to have this in their tiffin.

Ingredients  

  • 1 cup sooji/fine semolina
  • 1.5 cup water
  • 1 tbsp ghee , to roast dry fruts and sooji
  • ¼ cup +1 tbsp sugar
  • 2 tbsp ghee, for rava kesari
  • 2 tbsp milk, warm, to soak saffron
  • a generous pinch of saffron threads
  • ¼ cup dry fruits, i took raisins and cashews here

Instructions

  • Soak saffron threads in water or milk.(i am using milk here) keep it aside.
  • first heat ghee.
  • roast your dry-fruits and keep it aside.
  • in a same pan, add sooji/rava and roast.
  • roast your sooji until golden brown.
  • once it is roasted ,transfer into a plate and keep aside.
  • now, take another pan and water.
  • bring water to boil.
  • add roasted sooji and cook.
  • add sugar and ghee.
  • mix it and simmer for 5 mins.
  • add saffron milk.
  • mix.
  • at the time of serving add roasted dry fruits and serve hot.

  • always soak your saffron in warm water or milk.
  • do not skip ghee in this recipe as ghee gives the rich and smooth texture to the recipe.
  • you can add dry fruits of your choice.
  • adjust sugar according to your taste.
