The stories are saying that sambar is recipe founded by Maratha ruler “Shahuji”. one day, he was experimenting to cook “amti- Maharashtrian stew” recipe with pigeon peas(toor dal) instead of moong dal and tamarind pulp instead of kokum. They named the newly experimented dish as “Sambhar” after the guest of that day who was Sambhaji -another Maratha ruler.
While other stories says that the dish originally belongs to karnataka region.
I have used mixed vegetables like brinjals, potatoes, carrot, green peas and drumstick here with onion and tomatoes.I have also used homemade sambar powder here. if you don’t have homemade powder then I suggest going for Everest sambar masala.
Sambar is usually served with idlis ,dosa, and vada. sambar can be served with rice in your meals too.

Ingredients
to boil dal :
- ½ cup pigeon pea/ toor dal
- 1+1/2 cup water
- 1 cup mixed veg ,chopped, carrots,brinjals,potatoes,peas
- ¼ tsp turmeric powder
- ¼ tsp red chili powder
other:
- 2 tbsp oil
- ¼ tsp mustard seeds
- ¼ tsp cumins
- a pinch of asafoetida
- 8 nos curry leaves
- 1 medium onion, chopped
- 1 medium tomato, chopped
- 1 inch ginger, grated
- 2 medium green chilies, chopped
- 1 tsp sambar powder
- ½ tsp red chili powder
- ¼ tsp turmeric powder
- corinader , for garnishing
- 1 tbsp tamarind pulp
- ¼ tsp sugar
Instructions
- Add your dal into a pressure cooker. Add water.
- Take a small bowl which can fit in the pressure cooker.transfer all vegetables into that bowl.
- gently place the bowl into the pressure cooker.
- add turmeric and red chili powder.
- pressure cook the mixture for 7 mins.
- heat oil in pan.
- add mustard and cumin seeds. when they crakle add asafoetida.
- add curry leaves.
- add grated ginger and chopped onion. mix it well.
- add green chilies and tomatoes. mix it well.
- add boiled vegetables.
- Add tamarind pulp.
- add turmeric powder,red chili powder ,sambar powder.
- Add salt to your taste.
- add boiled and mashed dal. mix it well.
- boil for 5-8 mins.
- serve hot.
Notes
- you can use any brand of sambar powder if you don’t have homemade sambar powder. The taste of sambar greatly depends on the quality of sambar.
- if you are preparing in large quantity, cook vegetables and dal separately.
