Puran poli recipe is made from jaggery OR sugar OR both, Yellow gram(Chana dal) and wheat flour. I am sharing gujrati version here so I am using Toor Dal ( pigeon peas split).

Puran poli is stuffed bread with Sweet lentil filling.As I have told, Gujarati version have toor dal in filling and Maharashtrian version have Chana dal. Both cooking procedures are same.

Gujrati vedmi is served with Gujarati Kadhi while maharashtrian poli is served with Amti. If you are planning to prepare maharastrian style poli, please soak Bengal gram for 1 hour atleast.

Making perfect puran poli is an art and takes practice as you need know the texture and hardness level of your dough.

puran poli ,vedmi recipe

Ingredients  

for puran

  • ½ cup toor dal /pigeon peas split
  • 1.5 cup water, to boil dal
  • 1 cup sugar
  • ¼ cup jaggery
  • ½ tsp cardamom powder

for the dough

  • 1 cup whole wheat flour
  • water to prepare the dough, as per your need
  • salt to taste, optional
  • 1 tsp oil

Instructions

for puran

  • Wash the dal well under running cold water till water runs clear. Soak it into enough warm water for 20 minutes. If using chana dal then soak for 1 to 1.5 hours.
  • Drain the soaking water and discard, add dal to pressure cooker with water. Close the lid, put the weight on and turn the heat to medium. Cook the dal for 4 whistles or till dal is cooked but not mushy.
  • Your Dal will be cooked perfectly.If you see any water content then Drain the dal water in separate bowl Otherwise directly mash the dal using a masher.
  • Take mashed dal with jaggery/Sugar in a pan.(I have used sugar here). Turn the heat on medium and start cooking.
  • It will start to melt. Do not go away, stay there and keep stirring.
  • When Sugar melts completely, it will be very thin consistency. Continue stirring and cooking.
  • It will start to thicken up. Along with stirring, do scrap the pan from sides and bottom to prevent sticking.
  • It thickens more and we are almost there.
  • Add cardamom powder, mix.
  • How to check puran is right consistency: take spatula or spoon, insert in the center vertically, if it stands like this then it is ready, turn off the stove. If spoon falls down then it needs to be cook more.
  • Let the stuffing cool to touch, meanwhile make the dough.

for dough:

  • Add Atta in a bowl. Drizzle oil and rub into the flour using fingertips.
  • Then start kneading dough by adding little water a time. Dough should be smooth and soft, just like paratha dough. Cover and let it rest for 15 minues.

for making puran poli:

  • Divide the dough into 6 equal portions and make smooth balls. Flatten it out between your palms.Roll the balls to a medium size chapati.
  • Now puran is cool to touch and dough is rested. Divide the puran into 6 equal portions and smooth balls.Put the stuffing ball in the center and start gathering the edges, pinch in the center to seal.( you can directly put the stuffing using spoon Like i am doing here).
  • Gently,cover stuffing using roti and make a 'potli'.
  • Flatten it with help of your hand.
  • Dust little into flour and roll gently into 5-6 inch diameter poli.
  • Heat the tawa or skillet on medium heat. Once hot place one poli and let it cook on bottom side, you will see small bubbles on top.
  • As you see bubbles, flip it.
  • Flip and cook by pressing gently with a spatula.
  • Flip and cook by pressing again the other side.
  • Once cooked from both sides, remove it to the plate, apply some more ghee on top and serve hot immediately.
