Hear me out: This corn salad is your summer salad recipe and I mean it:) Last year when I went to India, my mom made this corn salad and it was soooooo good 🙂 Since then, whenever I make this salad, we literally have no leftovers 🙂
Ingredients
Below are the ingredients required to make summer corn salad.
Sweet corn – Fresh sweet corn tastes heavenly 🙂
Tomatoes – Fresh cherry tomatoes or vine tomatoes are good for this recipe. You can even use Roma tomatoes if you like.
Chilli – Green chilies really take this salad to the next level.
Herbs and spices – Fresh cilantro,salt, pepper and some lemon juice 🙂
How to(with pictures)
Step 1: Boil sweet corn.
First and foremost, Peel sweet corn and boil them. Pressure cook it for 1 whistle. If you are using an instant pot, boil sweet corn for 10 minutes and let the pressure release naturally.
Step 2: Assemble.
Take a mixing bowl, and add boiled corn, chopped green chilies, cilantro, and tomatoes. Add salt, pepper, lemon juice, and mix.

Variations
- You can add red onions to this salad if you like.
- Drizzle some olive oil on the top if you like.
- You can even add fresh ricotta or cottage cheese to make it more nutritious.

- 2 sweet corns
- handful cherry tomatoes
- 1- 2 green chilies, adjust according to your taste
- handful fresh cilantro
- salt to taste
- pepper to taste
- lemon juice to taste
