Misal pav- Signature maharashtrian break-fast or snack recipe. Misal pav spicy sprout curry served with fresh ladi pav and topped with finely chopped onions and lemon juice. This dish is served as a meal sometimes. Misal is a scrumptious Maharashtra curry which now widely popular in India.
Misal pav is often known as “mumbai misal” and it is a common man’s food just like vadapav.There are a lot of variations of misal which are puneri misal, nagpuri misal, Nasik misal and kolhapuri misal. however, Nasik is the destination for misal in Maharashtra.
Misal curry is made from sprouts.There can be moong bean sprouts or moth bean sprouts. Usually, misal is prepared from moth bean sprouts but in case of unavailability, you can use other sprouts as well. I made this recipe using both moong and moth beans sprouts.
Misal pav is very new recipe for our family as I grown up in a Gujarati family.After moving to pune, I tried this recipe and I am totally in love with this misal pav. If you ver got a chance to visit pune, You must try misal pav at “katakirrrr”. Actually, misal pav is a watery curry recipe. It is spicy in taste that’s you must lemon juice to make it milder. I learned this recipe from my friend Shraddha Gurlani. coming back to the recipe, this recipe tastes best when oil floats on the top so the amount of oil usually looks more than the usual curry has. additionally, This misal pav curry is a bit spicy in taste which is balanced by fresh breads/pav and lemon juice. This recipe is topped with Chivada OR namkin mix. Sometimes, Besan sev can replace the namkin-mix. Misal pav in incomplete without namkin-mix.

Ingredients
for preparing pressure cooked sprouts
- ½ cup matki /moth beans
- 2 tbsp moong beans
- 2 cups water, to soak beans
- 2 cups water , to boil beans
- ½ tsp salt
- ¼ tsp turmeric powder
for misal masala paste
- 1 medium onion, sliced
- 1 inch ginger
- 6-7 nos garlic cloves
- 1 tbsp desiccated coconut /khopara
- ½ tsp oil
for misal
- 3 tbsp oil
- ¼ tsp cumins
- 1 medium onion, chopped
- 1 tbsp red chili powder, adjust to your taste
- ½ tsp turmeric powder
- 1 tsp coriander powder
- 2 tbsp goda masala/misal masala
- ¼ cup water
- 4-5 nos curry leaves
- ½ tsp sugar
for assembling,
- 4 nos fresh pav
- 1 cup farsan/namkin-mix/chivda
- 1 small onion, finely chopped
- few lemon wedges
- corinader leaves, for garnishing
Instructions
preparing pressure cooked sprouts,
- Soak both the beans for 30 mins in hot water.
- in a pressure cooker, add moth & moong sprouts.
- add 2 cups of water, salt and turmeric powder.
- pressure cook for 3-4 whistles or till sprouts get cooked well.
- keep aside.
for misal masala paste,
- heat oil.
- add garlic cloves, onions and ginger.
- add dry coconut.
- roast until it leaves aroma.
- transfer the roasted mixture to a mixer jar.
- crush them to a smooth paste.
- keep aside.
for misal preparation,
- heat oil in the same kadai.
- add cumins.
- when they crackle add chopped onions and saute it.
- add crushed masala paste.
- add goda masala OR misal masala.
- add red chili powder,turmeric powder and coriander powder.
- add sugar.
- add salt to your taste.
- mix and cook the paste for 2 mins.
- add boiled beans.
- add water.
- add some chili powder again and mix.
- boil the mixture for 10 mins.
- keep aside.
assembling,
- in a serving bowl, add some farsan/namkin mix.
- then pour prepared misal.
- top with mixed farsaan, chopped onions and coriander leaves.
- serve immediately with pavs and lemon wedges.

Notes
- The reason of making masala paste is it gives a nice aroma to the recipe. You can add tomatoes as in this. In case of adding tomatoes, add 1 medium size tomato for this measurement.
- You can add 1 tsp of tamarind juice while boiling misal. It will give light tanginess to the recipe.
- If you are unable to find goda masala powder OR misal masala powder, then use regular garam masala. If using garam masala powder,use it 1 tbsp only.I never tried this recipe with garam masala powder.
