My mom used to make this khichadi and we called this recipe as “vaghareli khichadi”. The recipe I am going to share today is a very healthy recipe as well as perfect one-pot meal recipe. Earlier I have shared “dal khichadi” recipe which is a variation khichadi recipe and even Parsi dhansak is very similar to mix veg khichdi recipe.
This, Mix veg khichadi or masala khichadi recipe is prepared using toor dal, moong dal, rice and mix vegetables. here you can use your choice of vegetables. however, I used brinjals, potato, carrots, and cauliflower. green peas are a good option too but I couldn’t find it in my fridge ;).
This khichadi goes best with kadhi and curd but I like to have this with curd and some salad only. To make this masala veg khichadi recipe, you need to prepare your tadka first with onion, garlic and other spices. after that, add your lentils and pressure cook it. and your khichadi will be ready in 15 mins. don’t forget to add ghee on the top while serving as ghee is the essential part of any khichadi recipe.
If you have some time then soak the lentils for 15 mins but this is totally optional.
the most important tip to make this recipe is, try to use sona masoori or kolum rice. You can use any type of rice varieties but I suggest you avoid basmati rice. because basmati rice will not give the creamy texture to the khichadi.

so, how to make vegetable khichadi recipe? stepwise photos:
wash your lentils in running water and if you have some time then soak it for 10 to 15 mins.
now to prepare tadka, heat ghee/oil in pan.
add mustard seeds and when they crackle add cumin,green chilies, garlic, onion and saute for a while.
add mix vegetables and saute.
now,season khichadi with turmeric powder, red chili powder,coriander powder and salt.
add lentils and water.
pressure cook it for 4-5 whistles.
add some ghee on the top and enjoy when it is hot.

Ingredients
- ½ cup raw rice
- 2 tbsp green gram split(moong dal)
- 2 tbsp toor dal
- 2 cups water
- 1 tbsp oil/ghee
- ¼ tsp mustard seeds
- 5-6 garlic , minced
- 5-6 spring onions [chopped], or 1 medium onion
- ½ tsp turmeric powder
- ½ tsp red chili powder
- ½ tsp coriander powder
- salt to taste
- 2 medium green chilies, optional
- a pinch of asafoetida, optional
mix vegetables:
- 1 small potato, chopped
- 2 small brinjals, chopped
- 1 medium carrots, chopped
- ¼ cup cauliflowder, chopped
Instructions
- take a bowl and mix your lentils first.wash it in running water. keep aside.
- heat oil/ghee in cooker.
- add mustard seeds. when they crackle add cumins.
- add green chilies, garlic and onion. saute it for a while.
- add chopped vegetables.
- add turmeric powder, red chili powder and coriander powder. add salt to your taste.
- add lentils.
- add water and mix. also, add pinch of asafoetida.
- cover the lid of pressure cooker and pressure cook it for 4-5 whistles on medium flame.
- sprinkle some coriander on the top and also add some ghee on the top.
- serve hot.

- you can use your choice of vegetables like capsicum, cabbage, broccoli etc.
- you can even add ghee in tadka preparation as oil and ghee both will taste great.
- always cook khichadi on medium flame.
