Rajasthani/marwadi kadhi is very delicious, thick and tempting kadhi recipe made from spiced curd and other basic indian spices. This kadhi is minimal style kadhi which requires almost no veggies like onions.
Kadhi is an important part of Indian meal. This yogurt based curry enhances the taste of the whole meal. there a lot of variations in kadhi recipe and each region has its own method and taste.
Like in Gujarat, You will get a tangy,sweet and thin/watery kadhi which tastes great with khichadi. In north India, You will get a kadhi with gram flour fritters commonly known as pakora kadhi. If I am not wrong, mor kuzambhu is the south indian version of kadhi. There is also another version which is known as aloo kadhi. In the Pakistan, curd mixture is extended with fish and eggs.
This Marwari kadhi has very prominent flavor of bay leaf. This recipe does not require onions but you can add if you like. The hint of garlic enhances the taste of Rajasthani kadhi.
There are 3 basic stages to prepare this classic rajasthani kadhi
- prepare your yogurt mixture for the kadhi
- simmer yogurt mixture (very important)
- prepare tadka
- assemble tadka and curd mixture.
- garnish and serve

How to make marwadi kadhi
take a mixing bowl and transfer curd in it. Add water,gram flour , salt to your taste and pinch of turmeric powder.
mix well.
transfer directly into the pan.
Add green chilies.
simmer 10 mins on medium flame.
keep aside.
preparing tadka/tempering
take a tadka pan and add oil.
add mustard seeds and cumin. When they crackle add asafoetida and garlic.
Add curry leaves, bay leaves and dry red chilies.
gently mix. turn off the flame.
pour this tadka on the kadhi.
serve hot with rice and chapati.

Equipment
- Tadka pan

- ½ cup water
- 2 tbsp gram flour /besan
- ½ tsp turmeric powder
- salt to taste
- 1 medium green chili, chopped
for tadka
- 1 tbsp oil
- ¼ tsp mustard seeds
- ¼ tsp cumin
- a pinch asafoetida
- 6-7 curry leaves
- 2-3 dry red chilies
- 2 bay leaves
- 1 tsp garlic, chopped
Instructions
- Take a mixing bowl and transfer curd in it. Add water,gram flour, salt to taste and pinch of turmeric powder.
- Mix well.
- Transfer directly into the pan.
- Add green chilies.
- Simmer 10 mins on medium flame.
- Keep aside.
preparing tadka/tempering

Notes
- You can add onions if you like. If you want to add onions then add them along with garlic when preparing tadka.
