Banana bread is a moist, sweet, and cake-like bread recipe. February 23 is considered an official banana bread day. Do you know what, Some food historians believe banana bread was a byproduct of the Great Depression as resourceful housewives did not wish to throw away overripe bananas 🙂
I was really excited to try gluten-free flour as I wanted to see the texture and taste of gluten-free flour. Moreover, recently a reader asked me to share some gluten-free recipes and I thought banana bread is a great start.
The ingredients of this recipe are easy to find. I used store-bought gluten-free flour here. Fresh, ripe bananas are the heart of the recipe. Though I am not following a strict gluten-free diet, I like to make some of my days gluten-free. Below are some of the health benefits of a gluten-free diet and bananas👇

Gluten-free flour – A good quality gluten-free flour is used here.
Ripe banana – ripe banana is an important ingredient of the recipe because after all, this is a banana bread recipe;)
Rising agents – baking soda and baking powder used here as an rising agents.
Sugar – I used granulated sugar here. You can use powdered sugar too. Do not use thick sugar granules.
Cinnamon powder – a pinch of cinnamon powder gives beautiful flavor to the recipe.
Butter – butter gives the nice texture to the bread.
Fresh yogurt – helps to rise the bread along with baking soda.
Milk – milk is an optional ingredient here (Not in the pic)
for glaze,
Icing sugar and milk – icing sugar melts easily in milk and gives a nice shine.
walnuts – finely chopped walnuts give a nice crunch to the recipe.

Gluten free banana bread
Equipment
Ingredients
for banana bread,
- 1¼ cup gluten-free flour
- ½ cup butter, room temperature
- ⅓ cup curd / yogurt
- ½ cup sugar, granulated
- 1 ripe banana
- ½ teaspoon baking soda
- 1 teaspoon baking powder
- ¼ cup milk, optional
- a pinch of cinnamon
for glaze,
- 1 cup icing sugar
- ¼ cup milk
- 2 tablespoon walnuts, chopped
Instructions
- Before starting, make sure your butter is at room temperature. Butter at room temperature gives the perfect texture to the recipe. Also, preheat your oven at 180˚C for 15 minutes.
- transfer butter to a bowl and whisk it. Whisk it until smooth.
- add sugar and whisk for a minute or two.
- now, add mashed banana, flour, baking soda, baking powder and roughly mix.
- also add curd and mix well.
- your batter will be light and easy to manage. You can add milk if you want to make the batter more lighter. At this stage, You can add pinch of cinnamon powder.
- Prepare your pan and line it with parchment paper.
- gently transfer batter into the pan. I sprinkled some cinnamon powder at this stage. Bake it for 20 minutes first. Check if it is slightly brown on hte top. If not then bake it for 5 minutes more.
- Check your loaf with toothpic, if it come out clean, It is ready.
For glaze,
- take a bowl and mix powdered suagr and milk really well. add chopped walnuts and keep aside.
- cool down the bread completely and drizzle some glaze on the top.
- enjoy!
