Can we use eggplants?
yes, technically brinjals, aubergine and eggplants are the same.
What are the herbs/seasonings we can use in this recipe?
oregano or rosemerry goes best with this recipe as per my opinion. I tried to keep this recipe pretty simple so used black pepper powder only. If you want to give some indian touch then you can use turmeric powder and a pinch of red chili powder too.
Can we use salted butter to prepare sauted brinjals?
yes you can. I have used clarified homemade butter which is known as “ghee” in india.
Can we freeze this recipe?
I don’t recommend to prepare this recipe in advance and serve later.

goes best with indian roti and parathas. you can use this brinjals as a base for your kathi rolls, sandwiches and pasta. I served this as a part of my indian meal.

How to make sauted brinjals recipe? step by step photos:
wash your brinjals and slice them. soak in a water and keep aside.
take a pan and heat ghee.
add cumin and asafoetida.Asafoetida is totally optional.
add sliced brinjals and minced garlic.
add salt to your taste and black pepper powder.
mix them well.
cook them for 10 min on medium flame. Check if brinjals are soft enough and cooked perfectly.
serve hot with chapati and rice.

I have two eggplants in the fridge, I wanted to make eggplants in tomato sauce tomorrow. I think you might have just changed my mind, I would rather cook your recipe now.
I’ve just made the eggplants for lunch. So simple and so delicious! I added a little garam masala and cooked 500 g eggplants. That was just enough for 2 people. 🙂 We served the eggplants with tomato bulgur, which is not Indian but it was a perfect fit. Thanks for the recipe.
