This lemon pickle has no Oil in this recipe. What I love about this pickle is the simplicity of the recipe.This recipe has literally no oil, no sugar and no spices. just a salt and turmeric powder is enough to make this delicious recipe.

My mom used to make this recipe every year and in Gujarati this recipe is called “aathela limbu”. This pickle recipe not the instant recipe as this lemon pickle requires at least 15 days to be set properly. This pickle recipe can stays fresh for 3-4 months in a refrigerator. I even observe at my home that sometimes this pickle can stays fresh for 1 year as well. The shelf life of this pickle also depends on the quality ingredients.

Always use fresh and a very good quality of lemon for this recipe. I also used fresh green chilies along with lemons. You can also add ginger with this. I love this chili, ginger and lemon combo. easy lemon pickle recipe

Ingredients  

  • 500 gm lemons, 6-7 medium size lemons apporx
  • ½ cup green chilies, sliced
  • ¼ cup ginger, optional
  • 1 tbsp turmeric powder
  • 1.5 tbsp salt
  • 1 lemon, to squeeze

Instructions

  • rinse lemon and cut them into bite size.
  • remove the seeds.
  • also slice green chilies.you can chop fresh ginger as well if you like.
  • keep them aside.
  • take a mixing bowl.
  • transfer the lemons into that.
  • add green chilies.
  • add salt.
  • add turmeric powder.
  • mix well.
  • add this mixture into starilized jar.
  • cover tightly with the lid. Allow this pickle to set in the jar for 1 week atleast at room temperature.
  • once ready, store in a refrigerator.

  1. rinse lemon and cut them into bite size.
  2. remove the seeds.
  3. also slice green chilies.you can chop fresh ginger as well if you like.
  4. keep them aside.
  5. take a mixing bowl.
  6. transfer the lemons into that.
  7. add green chilies.
  8. add salt.
  9. add turmeric powder.
  10. mix well.
  11. add this mixture into starilized jar.
  12. squeeze 1 lemon on the top to speed up the making process.
  13. cover tightly with the lid. Allow this pickle to set in the jar for 1 week atleast at room temperature.
  14. once ready, store in a refrigerator.

  1. Thank you so much for this simple and much needed recipe! I was diagnosed with pre diabetes and one of the healthy snacks I need to consume is organic Greek yogurt! I don’t have a sweet tooth(the irony!!) And not a fan of dahi and the only way I can cosume it with a side of lemon pickle, my most favorite pickleof all! Lately the excess oil & heavy spices in pickles has been an off for me! Last weekend bought some organic lemons from whole foods and made this! Can’t wait to eat it!
