Dahi vada is a popular street food or snack recipe where deep fried lentil balls are dunked in the flavored curd. Dahi vada is one of the classic and VERY Famous Indian street food recipe. It is also a perfect recipe for summers because it served as a chilled dish.

I always feel thrilled about trying some recipes that were thousands of years old.I mean just imagine how this recipe came, imagine about that time and etc. Apart from cooking, one of my favorite subjects is history-specially history about the mughals 😉  you know what, I have a separate collection in my book library on this. Different community has their own version of this recipe. For example, some add Tadka OR Tempering to the curd, some add sugar to the curd. The Marwari people use moong dal instead of urad dal to make wadas. Dahiwada can serve as a snacks or sometimes as a part of the meal.The wadas can be made a day in advance and refrigerated.

I used split skinless black gram here for the recipe. I tried to make this recipe very much simple just like the way I love. I use only tamarind chutney here. You can add more chutneys of your choice like green chutney, mango chutney etc..

dahi vada recipe

Prep Time 25 minutes
Cook Time 15 minutes
Total Time 40 minutes
Serving Size 2 servings

Ingredients  

for vada:

  • 1 cup urad dal(white)
  • 2 cups water, to soak dal
  • salt to taste

for curd mixture:

  • 1.5 cup curd
  • salt to taste
  • sugar to taste
  • 1 tsp ginger paste
  • ½ tsp green chili paste

other:

  • 2 cups warm water, to soak vadas
  • 2 tbsp tamarind chutney, optional
  • red chili powder, as needed
  • coriander powder, as needed
  • chat masala, as needed
  • besan sev, as needed
  • fresh coriander, for garnishing

Instructions

for vada:

  • Wash and drain urad dal.
  • Soak for 5 hours atleast.
  • After soaking, Drain the dal well and transfer to a mixer jar.
  • churn to a smooth paste.
  • allow it to set for 40 min to 1 hour in warm temparature.
  • now, add salt.
  • whisk the batter well until light and fluffy.
  • Heat oil in deep pan.
  • Take a small amount of batter in your hands put slowly into the oil.You can even use a spoon.
  • Cook this vadas on medium flame until golden brown.
  • Keep aside.

for Yogurt preparation:

  • transfer curd in a mixing bowl and add sugar.
  • add salt to your taste.
  • add ginger paste and green chilli paste.
  • whisk the yogurt well.
  • refrigerate it.

Assembling:

  • Boil water in pan.
  • Soak vadas in water and leave for 5 mins. Now, squeeze Wadas between palms to drain water.
  • In a serving bowl, first put vadas and cover it with curd mixture.
  • Now sprinkle red chili powder,coriender powder, chutnies, coriander leaves.
  • sprinkle some besan sev as well.
  • Serve.

Notes

  • Do not boil water too much otherwise your hands get burnt. we want a little warm water here.
  • You can stuff these vadas with dry fruit mixture to make kalmi wadas.
  • Sugar is optional in this recipe.you can avoid.
  • You can give tempering to the yogurt.for that, you need to make Tadka of mustard seeds,cumin seeds ,urad dal,curry leaves.
  • Be care-full while making batter.Your batter should be thick so that you can put vadas using your hands. If you can't, you can use your spoon as well.
  • Don't ferment batter more than 4 hours because we don't want to make it too tangy.

  1. Priya! Love your videos! Seriously you are a fabulous teacher. You should do cooking lessons. Maybe you already do this. May I ask what type of food processor you use to grind your urad dal. The last time I attempted making dosas from scratch, I essentially burned up the motor in our food processor. LOL Sharing, of course!

    1. Ohhhhh thanks a lot for appreciating… and yes, food processor i am currently using is current food processor
      But you can go for a cheaper option as well and it works fine as my mom is using this :-

      however, one thing you should always keep in mind that, while grinding any lentils please divide them into batches and add water by spoons. Adding water in a small amount not only help to grind pulses smoothly without any extra load on the motor but it also helps to maintain the consistency of the batter.
