I have tried this ingredient here with cauliflower. I read this recipe in one my continental recipe cookbook. I found this recipe very interesting because saffron is used here in one the most lovable Indian Vegetable. Cauliflower is undoubtedly the veggie liked by most of the Indian people. Aloo gobi,achari gobi, and even simple lasooni gobi are those famous north Indian cauliflower recipes.
today’s recipe is very similar to simple gobi roast you usually make in your tiffin-box.As I told initially what makes this recipe unique is the combination of sugar and saffron. I didn’t add garlic or onion to this recipe. But you can add garlic to the recipe.I am not suggesting to add onions to this recipe. In case of adding garlic, add 1/4 tsp only for the measurement given here.

Ingredients
- 1 cup cauliflower
- 2 cup water, to boil cauliflower
- salt to taste
- 1 tsp oil
- ¼ tsp cumin
- ⅛ tsp saffron /kesar
- ½ tbsp ginger chili paste
- ¼ tsp turmeric powder
- ¼ tsp red chili powder
- ½ tsp sugar
- 1 tbsp water, for the subji
Instructions
- cut the cauliflower finely and boil it in salted water first.
- drain it and keep it aside.
- now, take a pan and heat it.
- heat oil.
- add cumin.
- when they crackle, add saffron and roast it.
- add ginger chili paste and saute.
- add turmeric powder and red chili powder.
- add salt to your taste.
- saute.
- add boiled cauliflower and mix.
- add sugar.
- add water and mix.
- cook the gobi for 5 mins.
- serve hot with chapatis.
