Cookies are invented in 7th century in Persia. This recipe slowly spread all over the Europe. By the time of 14th century, cookies were common in all levels of society throughout Europe, from royal cuisine to street vendors. The most common modern cookie, made by the creaming of butter and sugar, was not common until the 18th century. It has came in lime-light after 18th Century.

Ingredients to make Cardamom Cookies

All purpose Flour – All purpose flour or I could say a good quality of all purpose flour is really important in baking.

Gram flour (besan) – okay, Gram flour is known as “besan” in hindi. This flour adds a bit of aroma and a distinct taste.

Butter or margarine – Either Butter or Margarine can be used to make this recipe but I prefer Butter.

Sugar – Sugar, In right texture and right amount is again very important to make any cookies. Granulated sugar is prefered. I am using granulated sugar for this recipe. If you can’t find granulated sugar then take your regular sugar and grind it to a powder form before using.

Cardamom – The Main flavoring agent in this recipe. I love to cardamom that is freshly crushed in my mortar and pestle.

and That’s it! You can add dryfruits but I am not adding it.

Yes, Yes and YES! You can store these cookies. In fact, These cookies can stay fresh up to 15 to 20 days without any worry. Remember to use an air-tight container to store these cookies. Store it at room temperature. Don’t refrigerate it.

How to make Cardamom Cookies?

First thing first. Cream the butter. Whisk/cream/mix the butter until smooth and light.

Now, Add sugar and again whisk/cream/mix it. You will get a nice, smooth and little bit of fluffy mixture.

now, add all purpose flour and gram flour. Also Add cardamom powder.

mix the dry ingredients well using spatula.

Gently mix together the whole mixture to a dough using your hands. “Never afraid to use your hands” as Julia Child says. If your mixture is crumbly, then add 1 to 3 tbsp milk. Do not knead the dough.

once the dough is ready, prepare your baking pan. spread some butter/ghee and place a parchment paper.

prepare medium size balls from the dough and place it on a baking tray. Keep some space between them as they expand while baking.

Bake the Cookies in a preheated oven at 200 degrees C/356 degrees fahrenheit for 20 mins till light golden or golden.

As oven temperatures may vary, it may take less or more time. So do keep a check. Enjoy.

Ingredients 

  • cup maida / all purpose flour
  • ½ cup gram flour / besan
  • 1 cup granulated sugar
  • ¼ tsp cardamom powder, or 2 freshly crushed cardamom pods
  • 1 cup butter, room temparature

Instructions

  • Cream the butter. If you are using an electric blender than keep it on a medium speed and whisk the butter. whisk/cream/mix the butter until smooth and light.
