We are a big foodie and at the same time, I am a lazy person to cook on weekdays especially;). I personally feel that this recipe is the best solution when you are running out of time. Actually, Sharing such quick recipes is not basically my goal for the blog but this is ME during weekdays:)so, I hope you guys will like this recipe.

For this recipe, Let me tell you first that you can use any bell peppers like yellow, red or green or even all three to make the dish colorful. however, I am using regular green capsicum here. This is a mild pulao recipe goes best with any dals and curries but I tried this recipe with simple dal fry, curd and simple chana masala.

I prepared this recipe in a pressure cooker to save the time and trust me if you follow the measurements, You can to cook a perfect rice in pressure cooker 🙂 And coming to the spices, I used coriander powder and a simple garam masala powder along with 3 regular wholesome spices which are cardamom, cinnamon and bay leaf. You can use red chili powder as well but As I have said, I want to make this really mild.

To make any pulao recipes, I highly recommend using basmati rice and I always make sure to soak the basmati rice at least for 10 mins and during this time, I usually prepare my chopping and all. You can try this pulao with sona masoori rice Or surti kolum rice but this will give you a little sticky result. Also, THese are not the long grain rice varieties so I usually avoid in pulao recipes because I like to have such a long grain in my pulao. You know what, I usually purchase an extra long variety in basmati rice.

how to make capsicum pulao recipe? stepwise photos:

first step, soak your basmati rice and meanwhile chop you veggies like onion and capsicum.

heat oil in pressure cooker.

add cumin and when they crackle add bay leaf, cardamom and cinnamon.

add onion and saute for a while.

add capsicums and mix.

add salt, coriander powder and garam masala powder. mix it well.

add soaked rice.

add water and cover the lid.

pressure cook for 3-4  whistles on high flame.

serve hot.
