Aloo Bhindi is one of my all-time favourite subji recipe. Bhindi and aloo are stir-fried in just a tablespoon of oil. Basic spices are added to make this curry more delectable. Oh yes, This one is an Indian dry curry recipe which super duper easy and quick to prepare yet tasty too. what else I need? 😉
Before moving further let me tell you Bhindi is a Hindi word of “okra” and Potatoes are known as “aloo” in Hindi. Bhindi Aloo fry is considered as classic north Indian curry recipe. Because This is less oil and easy to digest recipe, bhindi aloo is considered as a part of everyday Indian meal recipes.

Ingredients required to make this aloo bhindi
One of the best things about this recipe is, It requires very fewer ingredients. Fresh okra, potatoes, oil, cumin, salt, red chilli powder, turmeric powder and coriander powder are the ingredients required to make this recipe. You can always garnish this recipe with fresh coriander leaves.
How to prepare Bhindi Aloo Fry recipe?
Preparation is quite easy. First and foremost, Wash your okra and allow it to dry completely. Chop your okras and potatoes into medium pieces.
Now, It time for some tempering(tadka). heat oil and add cumin. Add veggies. season it with salt and other spices. Cook them well. And taddaaaaaaa, your curry is ready. Serve it with chapati, paratha or naan.
Can I freeze this Stir-fried okra?
Yes! After preparing this curry, allow it to cool down completely. Pack it in a ziplock freezer bag and freeze it. I am using Glad Zip-lock bags as of now. At the time of serving, Take a portion of this frozen curry and microwave it for 2 mins and you are good to go 😉

Bhindi Aloo fry – no onion no garlic

Ingredients
- 1 cup potatoes/aloo, chopped
- 500 gm okra /bhindi, chopped
- 1 tbsp Cooking oil
- ¼ tsp cumin
- salt to taste
- ½ tbsp turmeric powder
- 1 tbsp red chili powder, adjust to your atste
- ½ tbsp coriander powder
Notes
- You can adjust the amount of red chili powder according to your taste. you can even avoid it too.
- You can add 1 tsp of garlic paste in this recipe. Adding garlic will too taste great just like without garlic.
Bhindi bhujiya is a favorite summer veggies to have! Adding potatoes certainly adds a different dimension to the taste. It looks delicious 🙂
