Ingredients

cooked rice

tbsp
oil

mustard seeds

bay leaf

onion
finely chopped

tomato(pureed)
2 medium appox
salt to taste

tsp
red chili powder
½
tsp
turmeric powder
¼
tsp
black pepper powder
fresh corinader
for garnishing

curry leaves

tbsp
ginger garlic paste
Instructions
cook your rice and keep it aside.
wash tomatoes and make a fine puree.keep this aside.
heat oil in pan.
add mustard seeds and a pinch of asafoetida.
add bay leaf and black cardamom.
add curry leaves as well.
add onions and ginger garlic paste.saute it for a while.
add tomato puree,red chili powder,turmeric powder and salt.
mix it well.
simmer it for 7 mins OR until thickens.
add cooked rice and mix.
garnish with corinader and serve hot with raita or
plain yogurt
.

you can use fresh mint leaves.
you can even use a pinch of madras curry powder in this recipe as well.
you can even use canned tomato puree.
