Mathari is a very delicious snack recipe from the state of Rajasthan and Uttar Pradesh. It can be savory or sweet. Savory mathirs are generally prepared for tea-time snacks while sweet mathari is prepared during festivals. In most of the Indian states, sweet mathris is usually made during karva Chauth while in Gujarat, these matharis are prepared during Janmashtami.

Matharis are not restricted to specific festivals. It can be prepared during diwali, holi etc. mathri is a flaky, crispy, and super delicious recipe. This popular snack recipe can be consumed any time of the day.

There are various versions of making these mathris and I am sharing an authentic recipe which usually made in our region.Today’s mathari is prepared using all purpose flour and plain sugar syrup. You can prepare these flaky, crusty mathris once in a bulk and store for up to 10 to 15 days. Store them in an airtight container and relish eating for long.

To prepare this matharis you just need 5 ingredients which are all-purpose flour, ghee,water,sugar and oil to deep fry.The method of preparing mathris is very easy. you just need to prepare two elements of the recipe separately.

  1. prepare a perfect sugar syrup.
  2. prepare a perfect dough and fry matharis.

So, How to make sweet matharis?? stepwise photos:

to prepare matharis,

take a large mixing bowl and transfer all-purpose flour. Add ghee and crumble it.Your dough should hold the shape after crumbling.

now, slowly add water and prepare a smooth dough. keep it aside and allow it to set for 10 mins(optional).

now, take a small amount of dough and flatten it using your hands.

heat oil/ghee. and fry this matharis until golden brown and keep it aside.

prepare sugar syrup,

heat sugar and water.

add milk and boil until thickens.

check the consistency of your syrup. It should holds the shape in water.

syrup is ready. keep it aside.

now, dip the matharis in sugar syrup and strain the excess amount of syrup.

allow it cool down completely and store in airtight container.

for mathri dough

  • 1+1/4 cup all-purpose flour
  • ¼ cup ghee
  • ¼ cup water, to knead dough (add as required)
  • oil/ghee, to deep fry

for sugar syrup

  • 1 cup sugar
  • ¼ cup water
  • 1 tablespoon milk

Instructions

Notes

  • Your syrup consistency should be 3threads consistency. If you cook less than this then your mathris becomes soggy and will not stay fresh.
  • Always store matharis in air-tight container.
  • Adding milk sugar syrup will enhance the color of sugar syrup.

  1. It’s delicious. I have are them in my home town. Can you tell how much caloriu does it have in one sweet mathri? I am foodie . I like to have this craving of Indian sweet but at the same time I want to be careful about portion.
