Restaurant style Kadai paneer recipe with video and step by step photos : – Kadai paneer is the recipe for food lovers who like their paneer in chatpatta spicy masala. This recipe is a classic North-Indian dish served in restaurants. I tried to create a replica of restaurant style version. As the name suggest kadai paneer is prepared in Kadai or karahi. Kadai means Wok (not Chinese wok but Indian wok. Somehow similar. Indian wok has more depth than Chinese one). Paneer means Indian cottage cheese.

Kadai is used to prepare many other Indian stir fried vegetable dishes and even for deep frying indian snacks like poori, pakoras ,some sweets like halwa.
To make kadai paneer, paneer is seasoned, lightly spiced and cooked with onion, tomatoes and capsicums. 

The recipe is roughly being adapted from Sanjeev Kapoor cookbook. The restaurants serve two kinds of kadai paneer which is kadai paneer gravy and kadai paneer dry.

The one I am sharing here today is a dry version. It goes fantastic with pulao or paratha.

Kadai paneer restaurant style dry recipe

Kadai paneer is the recipe for food lovers who like their paneer in chatpatta spicy masala.

Ingredients 

for Masala

  • 2 tbsp fresh coriander powder OR coriander seeds
  • 2 dry red chillies
  • 1 tbsp cumins
  • 3 nos cardamom, green
  • 4-5 black pepper corns
  • ½ tbsp red chili powder

for kadai Paneer:

  • 1 cup malai paneer, diced
  • 1 medium onion, diced
  • 1 small capsicum, diced
  • 1 medium tomato, finely chopped
  • 1 tbsp oil
  • 2 tbsp butter
  • salt to taste

Instructions

preparing masala:

  • take a nonstick pan and put all ground spice together expect red chili powder.
  • dry roast the masala.
  • Once it leaves its aroma.Turn off the flame.
  • Add red chili powder and transfer the spices into mixture jar.
  • crush it and make a powder.keep it aside.

for kadai paneer:

  • Heat Oil in nonstick Kadai.gently put onions and fry onions until golden brown.
  • Now fry capsicum and paneer until golden brown.keep it aside.
  • now in the same pan Add sliced onions and chopped tomatoes.cook them until soft.
  • Transfer cooked tomato and onion in mixture jar.Blend it to a smooth paste.
  • Heat butter in nonstick pan. once the butter is hot enough ,add blended paste and saute it.
  • add the masala powder we prepared before and mix well.
  • Cover the pan with lid and cook for 5-6 mins.Add salt and fried paneer,capsicum and onions.
  • Mix well.Serve hot.
